Konomono - Pickled Vegetables

This is a bowl of pickled turnips. The turnips were blanched, sliced thinly, and placed in a bowl. Salt, konbu kelp, and lemon zest are added. It was then covered and weighted with a bowl of water and left to sit overnight. The excess water was squeezed out before serving.
