Miso beautiful miso

We made miso soup with the dashi that we had all ready made. Insise the bowl is yomogi fu (gluten) and wakame kelp. Sensei pours the miso broth to the side to not disrupt the ingredients in the bowl.

 

This was absolutely the very best miso we have ever had! I don't care what you've had at Japanese restaurants. This was probably the best miso outside of Japan. You know it's good when it makes you smile. Of everything we had that day, this is the one I'm most anxious to recreate at home.
