Chicken Vegetable Curry
Brown chicken, add curry powder, tumeric, dried hot chilies, pepper, salt, onions and lots of garlic. When chicken is cooked add cocos milk and bring to a simmer. Add cubed sweet potatoes and cook until very tender and milk thickens. Add cauliflower, red peppers and sugar peas and briefly cook, so that they remain firm. Sprinkle with fresh chives. Serve over rice and with fresh peppers on the side.
