Popeye Curls
Connie made this from a cookbook my co-workers created for me and Shane when we married in 1998. Connie made her own homemade vegetarian sauce and skipped the cheese grated on top. It was very yummy.

Popeye Curls

12-14 cooked lasagna noodles (wholewheat works well)
350g cottage cheese
1/2 c parmesan cheese
2 eggs
350g grated mozza
10 soda crackers crushed
1 pkg frozen spinach (thawed, drained and chopped)
1 jar of prego or your favorite homemade tomato sauce
Put enough sauce in bottom of 8x10 pan to cover. Combine all other ingredients, except sauce and noodles. Spread goop over each noodle and roll up. Place side by side in pan and top with the rest of the sauce. Bake at 350F for about 40 minutes.
