Versatile Chicken Toscana (Step 3a) and Easy Balsamic Chicken (Step 1a)

Smash several cloves of garlic. I prefer to do this by using the back of a chef's knife, but if you don't know how to properly do this or are afraid you'll cut yourself, you can whack the garlic with a rolling pin or heavy pan.
