puh-tey-toh, pə-tā'tō, po-tah-toh
However you pronounce it, this has nothing more than that as the main ingredient. It is cold outside and I am in my kitchen with my apron and camera :-) trying an old and simple recipe of my friend's.
I can call myself a decent cook, but I am terrible at giving recipes, in terms of measures!
Here is the recipe for this Potato dish.
What you will need:
Potatoes, boiled, peeled and diced.
Dry red peppers
Coarsely ground black pepper (I prefer freshly crushed)
Salt
Sugar
White vinegar
Oil for tempering
How to do:
1. Boil and dice potatoes.
2. In a pan, add a little oil.
3. Pinch and throw a few red peppers and crushed black peppercorns. Saute.
4. Bring the flame down and add salt, a little sugar and vinegar.
5. Add potatoes and mix well and serve.
It has the spice of peppers and the tang of vinegar :-)
[There is a possibility of charring the sugar if the flame is not simmered]
How many peppers, how much sugar, salt and vinegar? Depends on your taste :-)
