Adding pureed kaboucha squash into cooking vegetables in the making of soup joumou. Soup joumou, pumpkin soup, is the traditional soup served on January 1, New Years Day, in Haitian homes. January 1 is Haitian Independence Day and eating soup joumou together with friends is how the day is celebrated.

Kaboucha squash (or butternut substitute) is the base with a myriad of vegetables added. Some traditions add pastas, others do not.

Soup joumou is also eaten on Sundays.
