Souse - A Caribbean Dish

I have to resist the temptation to call it a delicacy but that implies it is something eaten rarely. Souse is however eaten up and down the country traditonally on a saturday along with it normal side dish, sweet potato pudding. Done properly it can't be beaten and goes very very well with a good bajan rum. Yes those red flecks are hot peppers, scotch bonnet i think.
