Sorting

All pickings have to be validated by a "supervisor" to ensure that the pickings are clean of foreign objects and of certain ripeness. Due to the coffee rust, picking the right ripeness of the cherries have proved extremely difficult due to the uneven ripening, resulting in more sorting required.
