Manzanas con Manchego Pasamontés

Apple and 'Pasamontés Manchego' cheese salad with walnuts. There weren't any walnuts in our dish this summer. The apples and cheese match in colour and a cheese hating member of our party (yes, it's surprising that I could be friends with someone who doesn't like cheese) was shocked to find cheese in the apples. I like the knife skills shown by the matchstick cut.
