White Asparagus

I had wanted to make an asparagus risotto but then I found these white asparagus in the supermarket and it seemed a pity if the asparagus got lost in the rice. So I decided to make this light salad instead.

 

Recipe

1. Gently peel the ends of the asparagus (1 packet) to rem

ove the tougher fibres. Cut into shorter bite-sized pieces. Boil the asparagus for about 10 minutes or so, till tender.

2. Combine: baby romaine lettuce (2 small heads), one packet of cherry honey tomatoes (halved), 2 shallots (diced) and coriander (one handful).

3. Make the dressing: I used 1 tsp wholegrain mustard, 3 tbsp extra virgin olive oil, 1 tbsp balsamic vinegar, 1 tbsp honey, salt and pepper to taste.

4. When the asparagus has cooled, place in with the leaves and dressing and toss.
