Aendir and I went exploring today and found, Visit Mexico. We spent hours exploring ruins, riding our horses along beaches and through forests, looking at monuments and shopping in the mexican market...

I really reccomend you go take a look yourself, it is a really lovely place and it is in a good cause too, trying to raise the profile of each of the RL sites to save them from neglect.

Ok kingdufus I barely made the deadline for our virtual potluck! This is pasta with an arugula/pistachio pesto.

1 bag baby arugula

1/2 c grated parmesan

1/3 c pistachios

2 Tbs garlic-flavord olive oil

2 Tbs water

blend in food processor till smooth...add to pasta and grate parmesan on top.

nice with chianti.

you have to like the taste of arugula. Next time (if there is a next time) I would add a 1/2 garlic clove to make it more like the real "green death" pesto

I'm still not quite sure I like this but the good news is the dog loved the leftovers.....
