I'm playing along with chef Rick Bayless' twitter contest (although I'm no longer submitting photos, since I was lucky enough to be selected the first week). His tweet for the second week with the recipe was:

 

"Rst 1#tomtllos,1 on,3 grlc,3 serranos;puree;sear n oil 2 thkn;simr w 2c broth,.5c crema.Oil,micrwv 12 torts,roll w rstd veg,sauce, chs, bake"

 

It just so happened that I was out of town, so even though I had brought camera, tripod, and ingredients, I was working in a kitchen other than my own (better views, obviously). I interpreted the tweet to mean to fill the enchiladas with roasted vegetables, for which I used squash, carrots, and sweet corn from my CSA share this week. I served this with a little more crema and a quick salsa made by blending a seeded tomato, 1/2 a serrano, 2 cloves of garlic, cilantro, salt, and juice from 1/2 a lime.

 

OK, so the picture is just as much about the place it was served as it is about the food, but wouldn't you have a hard time resisting including a view like that?
