Last year when I was on a soft food diet a friend gave me a modified tapioca pudding recipe containing less fat and less sugar then most recipes. He used to cook it for his senior dog. this is for me, not the hyenas.

Pretty straightforward homemade tapioca using granulated tapioca. I altered the recipe to use low fat milk and slightly less sugar, and it still tastes just as yummy!
The plastic wrap goes snugly over the top so that 'skin' doesn't form. Some folks like pudding skin - I don't! :)
