Standup Sushi (the japanese name is escaping me) is pretty self-explanatory. It's where a lot of on-the-go business guys head for a quick lunch. You shout out to the chef what you want and he cuts it right there. You stand right there and eat it. It comes with a cup of hot green tea. Order a beer and have lunch.
