With a base sweetened only with vegan caramel sauce, this coffee cake is reminiscent of an old fashioned doughnut in flavour while being 100% whole grain. Topped with a decadent streusel, it can be dessert, breakfast or a teatime treat.

Adapted from The Gluten-Free Baking Book by Donna Washburn and Heather Butt to make non-gluten free (using spelt flour), these muffins also get pops of crunchy maltesers and super-chocolatey cookies inside!

Ingredients:

 

200 gr spelt flour

5 – 10 tablespoons unsweetened soy milk

50 gr dates syrup

150 gr malt

3 tablespoons ground flaxseeds

180 gr soy butter

1 vanilla pod

1 baking powder (16 gr bag) – 1 tablespoon baking powder

100 gr poppy seeds

1 tablespoon apple sider vinegar

I'm hesitant to call this a fail, because even though it took twice as long to bake as the recipe stated, it was wonderfully moist, tender and textured. Perfect BBQ food.

 

¼ cup coconut oil, at room temperature, plus more for buttering pan

½ cup non-hydrogenated shortening

½ cup sugar

12 packets Truvia (or ½ cup sugar)

3 tbsp homemade egg replacer, mixed with ⅔ cup warm water

1 cup 100% fruit jam

2 tsp ground cinnamon

1½ tsp ground allspice

½ tsp salt

1½ cups all-purpose flour

1 cup non-dairy “buttermilk” (I used almond milk and rice vinegar)

1 cup spelt flour

1 tsp baking soda

1 tsp baking powder

⅔ cup chopped walnuts

1/3 cup roasted lentils (optional)

 

Preheat oven to 350 degrees. Grease a 9” springform pan.

In a bowl, beat coconut oil, shortening, sugar, Truvia, egg replacer and jam until well combined.

Beat in cinnamon, allspice and salt.

Mix in the flour until almost combined, then add all the “buttermilk”.

Mix until just combined, then beat in the spelt flour, baking soda and baking powder until well mixed.

Fold in the walnuts and roasted lentils (if using)

Bake 1 hour, until a knife inserted in center emerges clean.

Ingredients:

1 teaspoon baking powder

1 tablespoon soy butter – room temperature

2 tablespoons apple sauce

5 spoons soy milk with 1 big tablespoon ground flaxseed

100 ml soy milk

1 vanilla pod

This vegan loaf cake is studded with "crimson raisins",a blend of cinnamon, nutmeg, allspice and cardamom and a hint of orange jelly. Served for dessert or as an afternoon snack, it's a deliciously unique addition to the day.

An oil-based, partial spelt pastry envelops a combination of blueberries, goji berries and raspberry jam thickened with a touch of graham cracker crumbs. It's the best poptart around!

Vegan, VERY low fat, whole grain, but it doesn't taste healthy!! This loaf is incredibly moist, full of fruity flavour and has little pops of sweet and spicy ginger just for kicks. Note: THIS DOES CONTAIN GLUTEN, JUST NOT WHEAT.

I had a KAF recipe for yeasted crackers, which yielded a result that was more "biscuit" than "cracker" but still delicious. It pairs perfectly with my Brilliant Bean Dip too!

This was a "dump" type of recipe so I only have approximations:

 

Beat together

1 egg

about 1/2 cup each sweet potato puree, ricotta and cream cheese

splash of milk

1 tsp vanilla

3 tbsp icing sugar

2 tbsp chocolate protein powder

1 tbsp unsweetened cocoa

1 packet hot chocolate mix

1 cup quinoa flakes

1/2 cup spelt flour

 

Then fold in:

5 mini boxes Smarties or M&Ms

 

Flatten on SilPat / parchment lined sheets and bake at 350F (convection) for 11 minutes

IMG_6372 - Apparently spelt flour is good for you and just like Rye flour, it's difficult to get a decent rise out of it.

 

Ingredients: 500g flour (50% unbleached white bread flour, 50% spelt flour), 300ml water, 30ml olive oil, 10g salt, 10g yeast.
