I took a few weeks off from baking after going overboard during December, and I tell you, the break felt good.
But today as I was looking through the kitchen for a snack, I realized snackage was seriously depleted.
Since I didn't feel like going to the grocery store, I started looking for ingredients, and had just the right amount of stuff to make cheddar scones!
Done, and now I have snacks for the week! Delaying groceries for a while longer! Win-win!
Recipe for those interested:
Ingredients:
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 3/4 tsp salt
- 1/4 cup cold butter, cut into cubes
- 1 cup grated old cheddar
- 1 cup cold milk
Directions:
01. Place rack above centre of oven. Preheat oven to 450F (230C). Line a baking sheet with parchement paper.
02. Using a fork, stir flour with baking powder, and salt in a large bowl. Work in cold butter until mixture is crumbly. Stir in cheese.
03. Make a well in centre. Pour in milk and stir just until moistened.
04. Turn out onto a floured cutting board. Divide in half and pat each portion into a 6 inch circle about 3/4 inch thick.
05. Cut each into 8 wedges.
06. Lift wedges onto baking sheet, placing about 1 inch apart for crusty-sided scones or 1/2 inch apart for soft-sided scones.
07. Bake above oven centre until golden, from 10 to 12 minutes.

Betsy, our beloved chariot, will be put up for sale in the coming days. Handing over the keys will be emotional. Yes, she was slower than a broken lorry and refused to start on a couple of occasions, but those are simply quirky character traits that define the uniqueness of who she is.
Granted, her windscreen squirty thing never worked, forcing me to manually wash the windscreen every time we stopped. And her breaks seized-up in the South of France, creating so much heat that it burned off the finger prints of the person stupid enough to touch the wheel trims – that would be me, of course. But she never failed to get us from A to B. Sometimes she even took us to C because Rachel would get the directions wrong.
One would think that discovering the treasures of France and parts of Spain would have been the highlight of our seven month adventure. Yet, for Rachel and me, our time with Betsy was the most enjoyable. With music playing, a flask of coffee and some unhealthy snackage at the ready, we enjoyed just about every road trip, often more so than the destination. We had 8,000+ happy miles together.
Countless times we sat in Betsy, waiting for sunset, or sought refuge from the rain. And she never once complained about navigating the streets before sunrise, in search of photo-worthy destinations.
When we adopted Gertrude Garmin, the family was complete.
Betsy held her nerve when all around her were losing theirs. In Paris we saw 3 accidents in an hour during rush hour. With the aid of Gerty, Betsy came out unscathed.
So to Besty: I’m sorry for accusing you of having a drink problem when you seemed to guzzle petrol like I’ve never seen before. It wasn’t your fault. You were made that way.
I’m sorry for taking you on roads you didn’t belong, where 4x4s were built to roam.
Forgive us for letting Byron, the 45kg Bernese mountain dog, leave a swimming pool-sized collection of saliva on your backseat.
But most of all, we ask for forgiveness for abandoning you for 5 weeks in Northern France. The Parisians would never have accepted you, especially with the large GB sticker on your backside.
We have a week or so left with you dear Besty, and Gerty, for that matter. Hopefully we can manage one last adventure before our paths separate.
Today’s Photo – The Wooden Escalator
I was told that the pedestrian tunnel, a place I’d photographed before, was closed for refurbishment. This ancient pedestrian way under the River Tyne was due a remodeling. I was saddened by the news because I’d lost all of the original RAW files that I’d taken previously and was left with just the HDRs.
As my processing style has changed drastically in the past year, I really wanted to re-visit this place but thought I’d lost my chance forever. Driving past it one day, I decided to pull in and check it out anyway. I had my camera ready, of course. To my delight, there it was in all of its dirty, ancient glory.
This is the longest wooden escalator in the world. It’s not much of a claim. It’s also home to the odd dodgy character or two. On this ocassion there were a few suspicious teenagers that shot off in the opposite direction when they saw the camera.

Today Maddie and I went to Storytime at Nuggets!
But instead of going empty-handed, we swung by our favorite eatery and picked up some primo snackage to share with everyone.
Usually, I wouldn't encourage the kiddos to eat the sweets before the food, but...I misbehaved and ate my dessert before I ate my meal (eep!).
I regretted it later *holds tummy and frowns*.
Now, Maddie and Britney played it smart! Britney(...or was it Whitney...oh man I can never tell those two apart!) had a Ham & Cheese Slider and my Maddie girl had Chili Doooogs.
Don't follow my example, kids! Food first! Cotton Candy...afterrrrr.

When I first heard the rumblings of what I thought might be thunder, the idea (bad one) occurred to me that I could continue my hike to the falls and if all hell broke loose, I could take shelter under one of these boulders or in the cave. But, I wasn’t prepared for overnight or wet conditions. I had only come for a day hike, only had 2 bottles of water and no food or snackage so I discarded the idea and when I reached a point where what I heard was definitely thunder, I turned around.
Spent a few hours this weekend making a batch of these cookies for a bake sale at the office (a fundraiser whose proceeds will go to help disadvantaged folks in the communities around my workplace.) I've been making a batch of these for Christmas for the last few years, and they work out well as a holiday cookie: they're delicious, they look attractive, one recipe yields 4-5 dozen cookies, they're pretty simple to put together (well, by my standards), and because of the technique there end up being little trimmings for chef snackage. They do involve both baking and caramel-making work, so they require at least moderate skills.
These are baked in a half-sheet pan, with a layer of buttery shortbread cookie, topped with caramel loaded with slivered toasted almonds and candied citrus peel, then cut into diamond shapes and topped with a drizzle of good chocolate.
I figured I'd try to catch the drizzle of chocolate being applied, so I set up lights and configured the shot with the camera on a tripod, and triggered the camera via my wired release while drizzling chocolate with the other. My arm cast a bit more shadow on the background than I had intended, but I don't think it's an issue.
Nikon D7000 w/Nikkor 18-200mm @ 200mm, 1/250s @ ƒ/9.5, ISO100. One SB-700 camera right and to the read, firing toward the scene through a white umbrella, 85mm zoom, 1/4 power. Second SB-700 at full power, 120mm zoom, bounced off the ceiling to fill shadows a bit.
Edit: here's the recipe, which I think I first found in an issue of Fine Cooking:
Ingredients
for the base
14 oz. unsalted butter, soft but cool
3/4 cup sugar
1/2 tsp. table salt
1 1/2 tsp. lemon zest (about 2 lemons)
1 large egg
1 tsp. vanilla extract
4 1/2 cups ( 1lb. 5oz.) all-purpose flour
for the filling
1 3/4 cups sugar
2 tbl. light corn syrup
7 oz. unsalted butter
3/4 cup honey
zest of one orange
1 cup heavy cream
17 oz. sliced blanched almonds, lightly toasted
3/4 c. candied citrus peel
for the glaze
6 oz. bittersweet chocolate, chopped and melted
Directions
In a stand mixer fitted with a paddle, combine the butter, sugar, and salt, and beat on medium-high speed until light and fluffy, about 3-4 minutes. Reduce the speed to medium, and add the egg, lemon zest, and vanilla, then scrape down the sides of the bowl. Add the flour in small increments at lower speed until incorporated. Shape into a rectangle about an inch or so thick, wrap in plastic wrap, and chill until firm, about an hour.
Butter a half sheet pan or jelly roll pan (13"x18") and line with parchment.
Remove the dough from the plastic wrap and place between two pieces of parchment. Roll out until large enough to completely line the bottom of the half sheet pan. The dough is forgiving; just trim and patch as you go. I like to roll out the dough a bit right in the bottom of the sheet pan, after I remove it from the parchment used to roll it out, to make sure the bottom is covered completely, about 1/4" thick. Chill until firm.
Lay parchment on top of the cookie layer, topped with either a second sheet pan or baking weights/beans, and bake in a preheated 350°F oven until the edges begin to turn golden, 18-20 minutes, then remove the pan/weights and top layer of parchment and bake just until set, about another 10 minutes. Remove from the oven and allow to cool completely.
To make the filling, first combine the sugar and corn syrup in large pan with 3/4 c. of water. Put the cover on the pan, bring to a boil, then remove the cover. Continue to cook over high heat, not disturbing the pan, until the mixture just starts to caramelize. At that point, start swirling the pan gently, and continue cooking until the caramel is a medium- to dark- amber color. Keep a close eye on it-burnt sugar is no fun to clean up. Remove from the heat immediately when you get the color you want, then add the butter, honey, and orange zest, and return to the heat. When it returns to a boil, whisk in the heavy cream, and cook until it reaches the top end of the firm ball stage, 250°F on a candy thermometer. Remove from the heat, add the almonds and citrus peel, and quickly pour over the cookie shell and spread out with a lightly-oiled spatula into an even layer. Bake in a preheated 350°F oven until the filling is just bubbling, 20-25 minutes. Remove from the oven and chill completely.
Run a paring knife around the outside edge of the sheet pan, invert the cookies onto a cutting board, and remove the pan and parchment liner. to cut the cookies cleanly, score through the cookie layer with a serrated knife, then finish the cuts with a chef's knife or pizza cutter. I usually cut these into diamond shapes by trimming off the rough edges, then scoring 1 1/4"-ish strips along the short dimension, then scoring from one of the corners to the corner of a strip so that the cut is at roughly a 45° angle, then scoring cuts spaced 1 1/4"-ish parallel to that first diagonal cut. Once I've scored the whole thing, I cut through the caramel layer and move the pieces to several parchment-lined pans.
Drizzle the finished cookies with the melted chocolate. I usually just put the chocolate into a sandwich baggie or parchment cone, cut off a corner/cone tip, and drizzle randomly.
Makes 4-5 dozen, depending on your cut, plus edge trimmings for the chef.

Kumi (mournfully): “Oh…I see.”
Yuri: *indulgent smile* “But I suppose I could bake a half batch of each today. We should test them out before the party, just to be safe, do you not think?”
Kumi: *perks up significantly* “Definitely! Plus, Simon loves your cheese straws, so he’ll be thrilled to have some for tonight’s snackage.”
Yuri: *begins grating cheese* “How is he doing?”

The Classic Milk & Cookies
Regardless of how much our stomachs hurt from eating too much junk (asian!) food, Hwayun, Julie and I ate away at these Chewy Choclate Chip Chips Ahoy! cookies. Say that five times fast.
I think the sugar high was way too much for Julie, but that's never surprising. (:
Satoru: *raises eyebrow* “Very good. You know Japanese?”
Magpie: “Only a little. I visit Tokyo fairly frequently and have good friend in town that’s been trying to teach me.”
Satoru: “I am sure you make for an excellent student.”
Magpie: *enigmatic smile* “Yes, well, his teaching methods are quite unorthodox, but they’re proving effective, nonetheless.”
Emma: “Mags, did you come alone?”
Magpie: “No, but I’m afraid I lost my entourage down on street level. Kums needed an ice cream from the shop next door, and she dragged the others away with her, presumably to play pack mule for her extras.”

A Swallowtail trying to take refuge from the heat up (and have a snack at the Humboldt lily) at Switzer’s Camp in the Angeles National Forest.
Halftime snackage for the Pats game today: churros (decided not to dismantle the deep frying rig after making french fries for dinner yesterday). Made these from a Googled recipe claiming to be from Rick Bayless, adjusted a bit for quantity, and the kids wolfed them down.
Ingredients
2/3 c. water
2/3 c. flour
2 tsp. sugar
pinch salt
2 tsp. vegetable oil
oil for deep frying
cinnamon sugar for dredging (1/3 c. sugar + 1 tsp. cinnamon)
Directions
Combine water, oil, salt, and sugar in a saucepan and bring to a boil. Add the flour all at once, and combine into a thick paste, pressing with a rubber spatula to break up any lumps of flour. Allow to cool in the pan.
Put dough into a canvas pastry bag or cookie press fitted with a large star tip (the dough is very stiff and is hard to extrude with a pastry bag). Extrude out roughly 5 inch long pieces into 375°F oil, 4 or 5 at a time, and cook until golden brown, about 3 or 4 minutes. Drain on paper towels, then toss in cinnamon sugar and serve warm. This will make about a dozen.
I served these with a thickened hot chocolate made from 1/2 c. of milk, one disc of Ibarra Mexican-style chocolate, and a 1/2 tsp. of corn starch.
Word to the wise: I had a little bit of dough left in the pastry bag that I couldn't extrude out, so I rolled it between my hands to drop in the oil. Don't do this. The exterior of this bit set, then the interior expanded and burst, spraying hot fry oil. I escaped serious injury, but it was a close call.
Having allowed the bus to run down to the bottom of the village whilst we headed into the shop for snackage, we caught it back up to the next village for suitably rateable photo of the next 15 going over Reepham LC....
16582 picks us up again at The Crescent in Fiskerton with a 15 to Lincoln via Reepham, Cherry Willingham and Lincoln County Hospital.
Was getting ready for bed when I realized I hadn't taken my daily photo yet, so quickly threw this together.
My kids and wife looked at me like I had a third arm when I bought it, but hey, I like this kind of stuff.
That said, it was pretty tasteless when I tried it just after I took this shot. I'll have to doctor it up a bit with some more pepper or something next time I bust out the snackage.
Always in a mood for a spot of snackage, I chanced upon this recipe which not only yields the most scrumpdelicious treats but was easy enough for a culinary-challenged person like me to actually follow. That was a sufficiently pleasant (and palatable) experience to offshoot what I'd like to think is an equally delectable pair of earrings, Cranberry Pumpkin Muffins.
Darling clusters that are delicate in appearance and dimension whilst choc-a-bloc with drama and decadence by way of colour and texture begin the visual encounter that is Cranberry Pumpkin Muffins.
Waterfalls of Polished Pyrope Red Garnet Rounds, 14K Gold Filled Seed Beads and Faceted Black Spinel Rondelles drape downwards in a most alluring fashion. Dotting the circumferences of gem-encrusted hoops are Cherry Garnet Rondelles with spectacular Polished Sunstone Briolettes dangling within their midst. The schiller given off from those red hematite flecks lends a brilliant spangled appearance which can truly even be glimpsed from afar.
Adding that final touch of extreme chic are oh so droolsome, rare and absolutely to-die-for Black Sapphire Pear Briolettes with coppery flashes that are utterly au naturel!!
Perfec to Fall, rather, just about perfect for every day.

This brown creeper pecked into a small crevice in the bark and pulled out this small bug (a moth, I believe).
So last night, while we were watching Sopranos, eating Chinese take-out, doing some other fun stuff, and playing Super Scrabble Deluxe, we were debating on what to do this weekend. It is our kidless weekend and we like to make sure to do "grownup" things as well as have some nice bonding time. Dave threw out the idea of a LOTR marathon; over a year ago we did a Matrix marathon and have been talking about doing this one since.
We knew it would be a chilly day and a good one to stay in. We were having brunch about 10 and I remember saying "it's WAY too late to start a LOTR marathon, especially since we have the extended editions of all 4, it will be 12-13 hours with NO breaks!"...well he got me to agree to watch the first and go from there.
Well his mom's car battery died so he had to run over there to bring jumper cables, he went to the store to get mucho snackage, and we didn't start movie #1 til 1pm :P I told him if we watched #2 we HAD to watch #3 the same night because it is my favorite favorite FAVORITE and #2 is the one I care the least for.
So here it is almost 10pm and #2 just ended. We decided to come down and take YIP's before we go up for #3 - 4 hours and 10 mins on the extended edition! So we will be up past 2am; we must be getting old as it is so rare we do it we both went "omg, 2am?!?!" hah.

Stereotypically, Gujaratis eat this snack a lot. In the film Kal Ho Naa Ho, the Gujarati boys prents who lived in New York had made a killing with a brand called Dial-a-Dhokla. Googling this very name only returns the film, which is a shame, as a service like this would be pretty damned sweet if you ask me.
It is basically made of mashed chickpeas, or besan (gram flour) soaked overnight. This paste is fermented for four to five hours, then is spiced by adding chile pepper, ginger, and baking soda.
It is then steamed for about 15 minutes on a flat dish and cut into pieces. It is fried in a distinct way, where in oil is heated with mustard seeds in it, Garnished with coriander and often with grated coconut, (not in this instance).
This was taken at Ashna on Staines Road in Hounslow, the place does a good assortment of snackage, mains & sweets. If you ever end up there, this & the Besan Laddoo are a must.

If you can believe it, this was all the pre-dinner snackage that Sherri had out as early as breakfasttime. I had a bowl of cereal as soon as I came over from Gina and Eric's, but of course I still chowed down on all of this stuff pretty much all day.

"I remember....... hm.... I forgot what I remembered"
I call today adventure day because it was my time to run away from reality. I haven't had a day like this since spring break, so I was quite ecstatic :)... hm... ok ok spring break was only a month ago, but still.
Julian and I headed over to Chinatown to "sort of" run some errands, but we were mainly exploring instead. I haven't gone since more than a year ago so I wanted to see what's new. Or... what's not new. It was so nostalgic going to all the places that I used to frequent a lot when I was a little girl with my mom :). For lunch, we even went to this little chiu chow restaurant in one of the plazas that I used to always go to with my mom. The food seemed just about the same too, haha.
In the end, we didn't really get anything except for random snackage (strawberry boba slushie, egg custard bun). However, we explored well and had tons of fun :). Plenty of laughs.

Once we headed back to the car, we were thinking about what else to do. It was only 4pm and we didn't know where to go. Then one of us brought up the beach, so off we went! :)
Santa Monica was the closest, so we decided to head over there and hang out by the pier since we weren't exactly dressed for the sand and water. And it was SUPER cold too.
Grabbed some funnel cake and enjoyed the performances. There was this one guy who sang a cappella and sang wonderfully in my opinion :). It seemed like he took his entire track list off of my iPod. Sat by the water for a pretty long time just chillin' and talking. It was such a relaxing moment and I wished it lasted longer :\.
Then we walked through the arcade/game booths and played (well more like... watched Julian make a fool of himself). Hehe... the ladybug :)

Then drove back to the 626 area and grabbed some food from Savoy and spent the night watching a movie I rented (The Boy In The Striped Pajamas.... so sad)
