I had a great time on the weekend taking photos of ... three Miniature Horse's, a Donkey, a regular sized Horse, a Cat and a Belgian Shepherd.

This weekend recipe is a Apple Mint Smoothie with coconut milk yogurt.

We bought in to the vitamix blender come-on at whole foods. Four months and 100 smoothies later, we're two thumbs up. Besides, it's the only way we can sneak carrots into our daughter's diet.

Pedaling the bike powers the blender which makes the smoothie.

My first green smoothie. My sister got into making these recently, and I was inspired to try it out.

 

Recipe, 1st try

1 scoop Strawberry protein powder

1.5 oz frozen raspberries

3 c. chopped fresh swiss chard

1 T heavy cream

1 T flax seeds

1 T almond butter

1 c. cold water

 

Next time I'd add ice, I wish it was colder. And I don't think it needs to cream; the whey protein powder makes it kinda creamy. Yum!

Back at home after a great holiday, we had a wonderful time although it was bit hectic and I was only able to shoot two 120 and one and a half 35mm rolls.

I'll try to catch up with all of you as soon as I can and will be developing this rolls during the week.

I decided to make a smoothie today. Apple, nectarine, berries, banana, vanilla yogurt and guava juice. YUM!

The kids got out of school early - so we treated ourselves to our special smoothie...strawberry, pineapple & Orange Smoothie with the fun addition of boba pearls.

A smoothie made from Nopales (cactus leaves) ... interesting taste ... not sweet exactly, but quite fresh ... a bit like cucumber perhaps ...

Nopales (from the Nahuatl word nĹŤpalli for the pads) are a vegetable made from the young cladophyll (pad) segments of prickly pear, carefully peeled to remove the spines.

 

These fleshy pads are flat and about hand-sized. They can be purple or green. They are particularly common in their native Mexico, where the plant is eaten commonly and regularly forms part of a variety of Mexican cuisine dishes. Farmed nopales are most often of the species Opuntia ficus-indica, although the pads of almost all Opuntia species are edible.

 

Nopales are generally sold fresh in Mexico. In more recent years bottled, or canned versions are available mostly for export. Less often dried versions are available. Used to prepare nopalitos, they have a light, slightly tart flavor, like green beans, and a crisp, mucilaginous texture. In most recipes the mucilaginous liquid they contain is included in the cooking. They are at their most tender and juicy in the spring.

 

Though Nopales are most commonly used in Mexican cuisine in dishes such as huevos con nopales (eggs with nopal), "carne con nopales" (meat with nopal), "tacos de nopales", or simply on their own or in salads with Panela Cheese. Nopales have also grown to be an important ingredient in New Mexican cuisine.

 

Nopales are very rich in insoluble and especially soluble dietary fiber. They are also rich in vitamins (especially vitamin A, vitamin C, and vitamin K, but also riboflavin and vitamin B6) and minerals (especially magnesium, potassium, and manganese, but also iron and copper). Nopales have a high calcium content, but the nutrient is not biologically available because it is present as calcium oxalate, which is neither highly soluble nor easily absorbed through the intestinal wall. Addition of nopales also reduces the glycemic effect of a mixed meal.

 

Nopales are low carbohydrate and may help in the treatment of diabetes.

 

According to Reuters, some 10,000 farmers cultivate nopal in Mexico, producing around $150 million worth of it each year. Detection of the cactus-eating moth Cactoblastis cactorum in Mexico in 2006 caused anxiety among the country's phytosanitary authorities, as this insect can be potentially devastating for the cactus industry.

Big in our house at the moment. This one was banana, mango and something or other..

This is so refreshing during these hot summer days!

 

This is a basic but delicious recipe for a Pineapple smoothie that's delicious as is or with some added bananas or orange juice or even a small scoop of ice cream !

It's also yummy with a dollop of whipped cream on top!!

   

Pineapple Smoothie

 

Ingredients:

 

1 1/4 cups fresh pineapple

1 cup vanilla yogurt( or flavor of choice)

1 cup ice cubes

3 tsp pure vanilla extract

You may have to sweeten this a little depending on how sweet your Pineapple is.

  

Add all ingredients to a blender and process until smooth. Enjoy!
