Que seraient les Pouilles sans ses trois ingrédients majeurs, à savoir les murs de pierres sèches qui courent dans la campagne et le long des routes, les oliviers (50 millions) et ses hôtes, aussi discrètes visuellement que présentes par leur chant, les cigales, bien-sûr, dont je n'ai pu évaluer le nombre, malgré d'intenses recherches et de savants calculs.

la Recette du Far Phare Breton :
Tout d'abord il vous faut chercher un beau phare du littoral breton... (ici le Petit Minou à Plouzané).
Ensuite, l'aborder avec douceur et patience pour découvrir un angle qui vous plaît bien, selon la météo, la position du soleil...
Vérifier que la Mer ( d'Iroise ici ) arbore ses belles couleurs tant vantées...
Puis attendre que la plupart des "touristes" veuillent bien partir et décréter finalement que le Monsieur qui n'a pas l'air de vouloir bouger, eh bien, il restera dans la photo !
Se positionner comme il faut, et clic....
Entendre le soupir de votre fiston derrière vous, signifiant " Ah quand même ! Elle s'est enfin décidée !!!!"
Et se dire : ça y est, je l'ai eu, avec le soleil cette fois !!!! 😁

Recette de Baghrir:
- 2 mesures de semoule fine.
- 2 mesures 1/2 de farine.
- sel.
- 1 levure chimique.
- une cuiller a cafe de Levure de boulanger.
- 4 verre d'eau (ajouter un si besoin).
Baghrir Recipe:
- 2 parts of fine semolina.
- 2 parts 1 / 2 of flour.
- Salt.
- baking powder 1.
- a teaspoon of baker's yeast.
- 4 glass of warm water (add if necessary).
Recette:
Cut the Brussels sprouts in half lengthwise leaving the base intact. Pull off any wilted leaves. Preheat oven on Convection/Roast to 450º with your sheet pan in the oven to heat. In a bowl, season with sea salt and freshly ground black pepper. Drizzle extra virgin olive oil, balsamic vinegar and a small amount of honey. Toss well to coat.
Once the oven has heated, remove the sheet pan and place alll the sprouts on the pan cut side facing down. Reduce oven temp to 400º and place the pan in oven. Roast for 15-20 minutes, turning the sprouts over about 1/2 way through cooking. Finished when there is nice even caramelization of the sprouts. Serve immediately while still hot.
Recette:
A 4 cm thick bone-in strip loin steak.
Coarse sea salt
Whole peppercorns - a mixture adds depth and visual appeal
Unsalted butter
4 crushed garlic cloves
Fresh thyme
Large shallot
Beef demiglace
Heavy cream
Worcestershire sauce
Dijon mustard
Whole green peppercorns in brine
Generously season both sides of the meat with coarse sea salt and refrigerate uncovered on a rack for 6 to 24 hours.
Remove the steak from refrigeration and set at room temperature for 1 hour.
Crush an equal parts mixture of black, white, and pink peppercorns with a meat mallet or mortar and pestle. Dry off the steak with kitchen paper and liberally coat only one side with the crushed pepper.
Preheat an oven to 500ºF
Heat a skillet over medium high heat until the pan temperature reaches 450ºF. Add a drizzle of high smoke point oil to the pan (Avocado, Grapeseed, Canola, Ghee). Lay the steak in the pan with the pepper side up and press down firmly to ensure good surface contact. Sear the meat without disturbing for 3 minutes.
Decrease the flame to Medium and carefully turn the steak so as not to disturb the pepper coating much (use tongs to grasp the meat by the sides).
Add 50 gm butter to the pan along with 4 crushed garlic cloves and several sprigs of fresh thyme. Sear the pepper side for 2 minutes continuously basting with the butter. Flame off.
Transfer the steak to a roasting pan and place in the hot oven for about 4 minutes checking the internal temperature with an instant read thermometer and removing from heat when the temp reaches 125ºF (for final rested temp: medium rare). Rest the steak under a small foil tent for 5 minutes while making the sauce.
The sauce!:
Warm the same skillet over medium heat removing the spent garlic and thyme. Add one large finely minced shallot. Sauté the shallot until softened, about two minutes. Flame off, add about 100 ml of Cognac to the pan, scraping up the fond left from searing the steak. Re-ignite the burner and carefully flambé. Once the flame had died, add 80 gm of beef demiglace and mix in well. Add 200 ml heavy cream, bring to the boil and reduce by 1/2 until the sauce is nappe consistency. Strain the sauce at this point if desired. Add green peppercorns to the sauce, amount depending on taste preference. Add 5 ml Worcestershire sauce and 5ml Dijon mustard; stir in well. Off heat, swirl in 10 gm cold butter. Immediately plate the sauce and lay the rested steak atop the sauce with extra poured on top if desired.

Pour préparer le crabe, commencer par enlever tout ce qui dépasse (pattes, pinces) en tenant ferment ces extrémités dans votre bec et en propulsant votre crustacé dans les airs. Quand il est enfin rond comme un caillou, avalez-le et laissez faire votre gésier. Plonger à nouveau pour en cueillir un autre et procédéz de même...

Recette:
Fillet of a fenny snake

Fire burn and caldron bubble.
Cool it with a baboon's blood,
Then the charm is firm and good.
Ingrédients (pour une vingtaine de biscuits) :
- 105 g de beurre
- 225 g de farine
- 100 g d'amandes ou de noisettes en poudre
- 85 g de sucre
- un sachet de sucre vanillé
- environ 3 cuillères à soupe de sucre glace
Préparation de la recette :
Mélanger le beurre, la farine, le sucre, et les amandes ou les noisettes en poudre pour obtenir une pâte.
La rouler en saucisse d'environ 2,5 cm de diamètre.
Mettre au frigo 1 h.
Découper en tranches d'1 à 1,5 cm d'épaisseur, et former des croissants (forme du type "croissants de lune, pour honorer la Déesse").
Faire cuire à 175°C (thermostat 5-6), 15 min environ.
Laisser refroidir sur la plaque un bon quart d'heure ( car les biscuits sont friables à la sortie du four!), avant de les rouler dans un mélange sucre glace/sucre vanillé .
Conserver au frais et au sec.
ne collez pas autant les biscuits sur la plaque à gâteaux que sur la photo ...en fait, je fais deux cuissons car ils s'étalent en cuisant . Nous, nous les préférons aux noisettes mais ça c'est une histoire de gout :-))
