with thanks to Moon Rhythm whose fabulous photos of delicious onion fritters flic.kr/p/2rerz7u reminded me that i'd bought chickpea flour recently to make potato and onion bhajis but forgotten all about it. her mouthwatering photos nudged me into the kitchen ...
onion and potato finely sliced in a large bowl
sprinkled with salt
plenty of spices of coriander, chilli and turmeric added
mixed together
covered and left to rest
then hand blended with chickpea flour www.sainsburys.co.uk/gol-ui/product/doves-farm-organic-ch... and sprinkles of water until happy with the consistency
handfuls of the mixture submerged into a wok of very hot oil
slid each handful of spicy mixture down the side of the wok to slowly enter the hot oil
cooked a few at a time

The chef’s special indian dish (raita, salad, home made cheese, lentils and chickpeas) at restaurant Bombay.
Dunseverick Castle is situated in County Antrim, near the small village of Dunseverick. The fortified site was inhabited from early times. One of the royal roads from Tara, seat of the Kings of Ireland, ended here. The castle is named after Sobairce, one of the Kings of Ireland, who reputedly built a fort, called Dunsobairce here in 1525 BC. During the “Dark Ages” it was an important site in the Gaelic kingdom of Dal Raita that encompassed the western seaboard of Scotland and the north-eastern corner of Ireland. In the 5th century the fort was visited several times by Saint Patrick who even baptized a local man here who later became Bishop of Ireland. A well, which existed a few feet from the cliff edge, was named after St. Patrick. In 870 the stone fort at this location was attacked by Vikings. From about 1000 Dunseverick Castle was held by the O'Cahan family. As a result of the 1641 Rising, when rebel Catholic elements surprised Protestant settlers, massacring large numbers, Dunseverick Castle was destroyed by General Robert Monro and his troops. The scant remains of Dunseverick Castle are wall fragments of a tower and some overgrown foundations on top of a dramatic promontory. A small residential tower survived until 1978 when it eventually collapsed into the sea below.

"Bisi bele bhath is a spicy, rice-based dish with origins in the state of Karnataka, India. It is said to have originated in the Mysore Palace and it took a 100 years for the dish to come out of the palace kitchens and another 200 years to spread across the state of Karnataka. "
third attempt at onion bhajis. this time without the help i had in the second attempt. feeling happier. they taste delicious and look much more presentable than my first attempt. onion bhajis are on the menu :)
ingredients used for this attempt
finely cut onion, potato, and spinach (would have preferred fresh coriander but none in the cupboard),
mixed with chilli flakes, chilli powder, turmeric powder, coriander seeds, coriander powder, cumin powder, chickpea flour, water, salt,
deep fried in rapeseed oil

A local Lahori festive specialty, Katlama (pori base prepared with May’da i.e white flour) topped with Basin (gram flour) mixed with herbs and spices, and fried in oil in a flat iron pan of giant size (absolutely not for calorie conscious folks!!). No matter where you buy it, Katlama always tastes the same. It is also known as Desi pizza.
You can have the traditional variety of this savory, pastry type-dish, a little slice of deep-fried heaven, and sometimes meat-filled during festivals in Punjab. Some restaurants also serve the value added Katlama. You can try the different varieties of like Achari Lal Mirch or Aloo katlama,the Tamatar Feta Cheese katlama .For meat lovers, there’s Keema katlama, the Murgh Gilafi to name just a few. All these scrumptious, authentic katlamas will be served with a Vegetable Korma or a Rogan Korma respectively.
The original katlama, topped with spices and besan is usually eaten on its own. Sometimes with chutney or raita or whatever you like. In festivals it is made in a huge pan of about 2 meters in diameter and it will be fried as a large pori of the same size, later cut into small portions like pizza

Raita, my sweet little neighbour who loves to play and talk all day long, is very spontaneous and intelligent; reminds me of Olive from Little Miss Sunshine. Sometimes when i sit at my veranda, she comes by her window and talks to me.
