The email said "please be prepared to work from home for 6 to 8 weeks. starting tomorrow." I remember thinking, 6 weeks will be fine but if this goes for 8 weeks how is that going to work? It has been six months now.

 

Introverted by nature, being at home for months on end is fine. Not fine in the "I am screaming on the inside" meaning of the word. Really, I am fine.

 

Sometimes though, a string from my sweater gets caught on a sharp edge and I am unraveling, unraveling.

1 cup margarine, softened

2 cups white sugar

3 eggs

1/2 cup water

1 tablespoon vanilla extract

2 1/2 cups all-purpose flour

2 tablespoons unsweetened cocoa powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1 teaspoon ground nutmeg

|2 cups apples - peeled, cored and finely diced

1 cup semisweet parve chocolate chips

1. Preheat the oven to 325 degrees F (165 degrees C). Grease and flour one 9 or 10 inch tube pan.

2. In a large bowl cream the margarine with the sugar. Beat in the eggs then add the water and the vanilla.

3. Stir the flour, cocoa, baking soda, ground cinnamon and ground nutmeg together. Beat this mixture into the creamed mixture. Stir in the chopped apples and the semisweet chocolate chips. Pour the batter into the prepared pan.

4. Bake at 325 degrees F (165 degrees C) for 1 hour and 15 minutes or until the cake tests done when a toothpick is inserted near the center. Transfer to a rack to cool. Makes about 16 servings.

My keychain safety items: 1) Cash canister with $20 note in case I'm ever standed in Arizona and need money for a beer and cheeseburger, 2) My trusty multi function Victorinox knife in case I need to cut down a tree to make a fire, 3) A mini LED flashlight in case I find myself in absolute darkness and need to see what’s biting my leg, and 4) A whistle in case I fall off a trail, roll down a steep ridge past a big log and get wedged under thick brushes next to a mosquito infested creek.......and need to get someone's attention.
