Tomatoes didn’t become part of ketchup until the mid‑19th century, when American producers began using surplus crushed tomatoes from the growing canned‑tomato industry. This shift transformed ketchup into the sweet‑tangy condiment we recognise today.

Us Aussies call "ketchup", tomato sauce; because that's what it is! :-)
[Note to self: next time you need to photograph something beginning with the letter 'K', choose something easier like 'kill' or 'kryptonite'; because ketchup does not easily lend itself to an inherently interesting image. And if left standing for any length of time while you fiddle with your camera, ketchup tends to separate into an unattractive watery, slushy goo.]
The truth is I think ketchup is only ok though I am brand loyal to Heinz. I have some different variations on this idea that I will work on over the next little while. Writing in ketchup was a little slow, I had to start over several times and still didn't get the spacing quite right.

It is a sweet and tangy sauce, typically made from tomatoes, a sweetener, vinegar, and assorted seasonings and spices. Seasonings vary by recipe, but commonly include onions, allspice, cloves, cinnamon, garlic, and sometimes celery.[

Actually Ketchup is no longer made at this iconic building on Pittsburgh's north shore. As a matter of fact this plant isn't even owned by the Heinz company any longer. Sold twice since 2002, now private label soups are made here. However in 2014 Heinz did contract with the current owner to produce jarred baby food.
