These are some homemade pickles that I made along with my friend Heather in our fermentation class. These are true fermented pickles made with plenty of fresh dill and garlic. We made them by washing pickling cucumbers well in warm water and quartering them. We cleaned a plastic container very well and sprinkled a layer of pickling spices on the bottom of the container. We then packed the quartered cucumbers into the container and topped with more pickling spice, whole peeled garlic, and fresh dill. We then mixed up a salt brine and added a few ounces of sourdough starter to introduce the necessary bacteria to start fermentation. We poured the brine over the cucumbers until they were completely submerged. We carefully placed a layer of plastic wrap directly on top of the brine and allowed to ferment at room temperature for 1 week. A week later the pickled turned from a fresh bright green to a brown-green and the flesh was soft and clear. The garlic had turned teal from the pickling process. We removed the pickles from the brine and mixed a new brine to store the pickles in. These are so incredibly flavorful. They’re both soft and crunchy and perfect with an oversized sandwich.

This jerky was so good that I wasn't able to save the piece for my wife - I ate it on the ride home! From Garrett's Table:
"Trevor made some fantastic beef jerky this weekend. It’s a very simple recipe. He trimmed some skirt steak and sliced it very thin. He then tossed it in a bit of Soy Vay Wasabiyaki Sauce, a tangy teriyaki sauce with wasabi. He let the meat marinate for a few hours then dehydrated the meat at 150 degrees for about 3 hours, or until leathery. The meat was chewy yet tender and the flavor was out of this world. If you don’t have a food dehydrator you can use your oven to make beef jerky. Just place on a wire rack and set your oven to it’s lowest temperature. Place the rack in the oven and prop the door open with a wooden spoon. Periodically check the beef over the course of the next few hours until you have the desired end result. I didn't plan this photo. I had the brick wall from another photo, where I just experimenting with lighting. I had the wall on a table, planning to disassemble when I noticed window light cast a checkerboard like pattern, via shadows on the table. So built a back wall and assembled some minifigs for chess pieces.
There are things I wish came out better, but I was happy with the serendipity that led to the photo.
