I eat gluten free not because I want too but because I have too. Gluten free for over 30 years.

Artisan Sourdough bread for the Macro Mondays group. Topic: bread HFF!

Gluten free chocolate cupcakes with chocolate & vanilla buttercream.

I made these for a friend who is wheat intolerant, using Dove's Farm Organic Gluten Free flour, and used the sponge recipe on the back of the packet. They tasted ok, a little sweet and not chocolatey enough for me, but my friend was chuffed with them cos she rarely gets to eat cake!

Pizza

This one was tasty. It had a gluten-free crust, Pizza Sauce, Onions, mushrooms, Vegan Pepperoni and Drunken Goat Cheese.

It's been a while since I made a loaf of this bread. Soon as it was cool, Stu took two pieces and made himself a sandwich. I took one piece, toasted it and put some peanut butter and wild blueberry jam on it. It was so good with my cup of rooibos tea.

I froze the rest of the bread. It will last about 6 months that way. But I don't think it will last that long anyway.

It's almost there. This one tasted fantastic! A few more loaves to make sure it works every time, and there will be a recipe.

My #glutenfree models for today .My baking skills are very basic but with Nir's help we have been able to handle them quite well.

It was great :-)

From Wiki:

A gluten-free diet (GFD) is a diet that strictly excludes gluten, a mixture of proteins found in wheat and related grains, including barley, rye, oat, and all their species and hybrids (such as spelt, kamut, and triticale). The inclusion of oats in a gluten-free diet remains controversial, and may depend on the oat cultivar and the frequent cross-contamination with other gluten-containing cereals.

Coeliac disease, also spelled celiac disease, is a long-term autoimmune disorder that primarily affects the small intestine.Classic symptoms include gastrointestinal problems such as chronic diarrhoea, abdominal distention, malabsorption, loss of appetite and among children failure to grow normally. This often begins between six months and two years of age. Non-classic symptoms are more common, especially in people older than two years. There may be mild or absent gastrointestinal symptoms, a wide number of symptoms involving any part of the body or no obvious symptoms. Coeliac disease was first described in childhood; however, it may develop at any age. It is associated with other autoimmune diseases, such as diabetes mellitus type 1 and thyroiditis, among others.

Gluten Free Baking

I prefer to make small loaves of bread. I used Bob's Red Mills Homemade Wonderful Bread Mix. It's cooling so I will taste it later. I like how this one turned out.

I finally managed to find/tweek out a gluten free recipe for soda bread that's worked every time :)

Water from this tank is safe for gluten-free bakers. I looked for another left over from our Boreas Pass venture. Along the right of way on the D,SP&P RR (Denver, South park & Pacific Railroad) grade west to the summit of Boreas (the Greek God of Winds) Pass up from Breckenridge near the Continental Divide the "Baker" water tank was needed to replace the water boiled off on the heavy grades up. These were always located on a milder section of grade so the engines could restart the train after replenishment This was Bakers tank but I have no idea why the bakers needed so much water. I also have no idea why it need to be painted red when simply keeping water in it would have kept the tank in condition. Only one golden soldier shows although we were riddled with them on the other side earlier in the day.

On the way over Boreas Pass, we searched for Trump's Q-anon pizza parlor in the basement of the tumbled masonry engine house meant for the Mason-Bogie helper engines. We came up empty. We had no automatic rifles nor was there a police presence and we actually never disturbed any of the relic. You can search yourself atop Boreas on Google maps as closely as it allows. Yell if you find Q-anon relics anywhere about.

On the Breckenridge side, they rolled down to the original Dillon, (an old time RR executive) a desolate town in a bleak spot that was eventually covered by the Reservoir, and thence through Frisco before circling west and backtracking back up over Fremont Pass through Climax, Robinson and other small whistle stops on their way to Leadville to defy the D&RGW after a fight broke out over trackage rights up from Buena Vista. With other intentions, they graded down the Blue River hoping to gain the Colorado River. I spotted some of the grade on my last time up. They'd probably have had something then. Of course the RR construction took some more time and grading from Como (with a "C") to Fairplay, Alma and the London mines before grading south to Platte River Station, down Trout Creek to Buena Vista and Leadville then dividing and ending up at Nathrop, Alpine, Mt. Princeton, Iron City, St.Elmo, Romley and Hancock before the daft campaign over Alpine to Gunnison and points west of the Continental Divide. They always built with a gleam in their eye (and terbaccer juice on their lips) and without any common sense in their heads. Today, I am lucky to snag this shot without the steady throng of fat bodies in the way for their pictures. And now, the fourth, fifth or sixth load of summer smoke is on its way in and trashing the atmosphere.

Our beautiful valentine's amaretto truffles are delicious and super easy to make. They make a great gift. They are naturally vegan and gluten-free.
