I aquà l’arròs un cop servit al plat. Gra petit, solt i ben al dente (s’ha de mastegar, sÃ, potser a segons qui li semblarà que li falta un punt de cocció però a mi ja m’agrada aixÃ), sabors intensos i molt ben integrats (sofregit, ceba, un bon fumet de peix o marisc i alguna altra reducció...) formant un conjunt perfecte de greix i d’una intensitat sà pida espectacular. Sens dubte és aquesta una de les millors i més equilibrades interpretacions d’arròs sec de marisc que hem pres en molt temps. Com a única pega, vam trobar que els calamarsons que venien amb l’arròs havien perdut temperatura i van arribar massa tebis, un aspecte que haurien de cuidar.
