Elderflower is famous for wild food, but it is delicious in cordials, champagne, and fritters It is also a fantastic medicine, being especially useful for any condition where there is congestion in the sinuses such as hay fever, colds, or sinusitis. It is diaphoretic, anti-inflammatory, and anti-catarrhal and can be prepared as tea, tincture, or a cold infusion.

Every spring it is a feast for the senses when the elderflower blooms. Smelling these blossoms is a real treat with its fresh scent, a subtle blend of honey and vanilla. Most people think of the elderflower as weed, but for me it's the queen of herbs!!

For a very tasty elderberry juice, it is necessary to collect a lot of these flowers, which are soaked in water and left for 24 hours. After that, sugar and lemon are added. Juice (syrup) can be used throughout the year.

These are the flowers of the Elderflower tree. They are currently in bloom in the fields and woods where we dog walk. I have the SoS group to thank for prompting me to pick, photograph and subsequently make Elderflower Cordial today.

Right now the elderflower reigns supreme as Queen of the hedgerow as she decorates the land in clouds of white blooms. Elder truly lives up to its name ‘the people’s medicine chest’ as each part has some use or other for humans or animals alike.
