Fruity Bundt Cake
2 cups cut up dried fruits, soaked in ½ cup water and 2 Tbsp of rum.
2 cups granulated sugar
1 cup vegetable oil
2 teaspoons vanilla extract
4 large eggs
3 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
1 cup walnuts, chopped
Topping
Jam (apricot or peach)
Confectioners' sugar
-Preheat the oven to 350 F.
Grease and flour a 10-inch tube cake pan or 12-cup Bundt pan.
Heat oven to 350°.
Drain the fruit, reserving 1/3 cup of syrup. Set fruit aside.
In mixing bowl, combine the granulated sugar, reserved syrup, oil, vanilla, and eggs. Beat with a mixer on medium speed for about 4 minutes, until well blended.
In another bowl, combine the flour, baking powder, and salt; stir into the first mixture a little at a time, blending well. Fold in the chopped nuts and fruit mixture
Spoon batter into the prepared pan.
Bake for 1 hour and 15 minutes to 1 hour and 25 minutes, or until a toothpick inserted in center of cake comes out clean.
Cool the cake on a rack for 10 minutes; turn cake out of pan onto a cake plate.
Brush with the jam and sprinkle with confectioners' sugar.
This treat was made by a Grand "D" and bookworm, pulled from the Fairytale Baking Cookbook, A cookbook by author Christin Geweke, inspired by Snow White.. The Brothers Grimm wrote that the hupf may be a reference to the "jumping" of the dough caused by the yeast. Similar to a Bundt cake. Whatever the history, it turned out beautifully.

My "sweet" loves fruits cake and fruits strudel. The cake must be semi sweet but on my pieces I add powdered sugar (a lot of sugar and yes, my part of cake is bigger😉).

We had another guest from Toronto today, which gave me the opportunity to improve on my lemon bundt cake with a different recipe. It came out lighter and I avoided drowning it in the glaze. The second try was a winner.
Apple Cake. Gâteau aux pommes
3 - 4 apples - peeled, cored and cut into chunks
½ C. white sugar
2 teaspoons ground cinnamon
2 Tbsp margarine
Sprinkle sliced apples with 5 tablespoons white sugar and the ground cinnamon. Toss to coat.
Sauté apple chunks 5 minutes in margarine. Drain and set aside. (You should have about 3 cups of apples.) Sprinkle a bit of flour on the apples.
Mix together:
3 cups all-purpose flour
4 eggs
2 ¼ cups granulated sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 cup vegetable oil
1/2 cup orange juice
2 1/2 teaspoons vanilla extract
Directions
1.Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 10 inch tube pan.
2.Mix the flour, eggs, 2 1/4 cups sugar, baking powder, salt, vegetable oil, orange juice and vanilla until well blended. Batter will be fairly stiff. Add apples.
3.Pour the batter into the prepared pan.
Bake at 350 degrees F (175 degrees C) for about 70 minutes.
Let cake cool in pan before unmolding.
It's been a while since my last food photo.
