A special dessert for Christmas Eve in a glass reminiscent of days gone by.
The dessert is on a basis of Greek yoghurt, with a crumble of typical Belgian biscuits: "speculaas", known internationally as Biscoff. Passion fruit, mango and raspberries are also included. Home-made by my husband!

Speculaas is a type of spiced shortcrust biscuit baked with speculaas spices.
Speculaas is mainly made and eaten in Belgium and the Netherlands, as well as in the German Westphalia and Rhineland, Luxembourg and northern France.
Gli speculoos (internazionalmente conosciuti come Biscoff dalla fusione delle parole "biscotto" e "caffè") sono sottili biscotti speziati con cannella, chiodi di garofano e cardamomo, tipici del Belgio e dei Paesi Bassi (dove sono chiamati speculaas).
I had one bottle of batter mixed in refrigerator so I made a few more. 1 row with fresh strawberry slices, 1 row with mini chocolate chips, 2 rows with Biscoff cookie butter spread.

The company Lotus was founded in Lembeke in 1932 by the brothers Jan, Emiel and Henri Boone. When the company was founded, the brothers made cookies for breakfast and also speculoos (a type of spiced shortcrust biscuit) for St Nicholas Day.
I love these biscuits.
The Japanese call their version Taiyaki. These are both vanilla & chocolate and filled with one of the following: diced peach, banna slices, Biscoff cookie butter, chocolate chips, cinnamon/rose hip red bean paste.
I decided to start getting back into some macro photography for a change of pace. Here's how it went:
Hooked up the Olympus 60mm 1:1 macro lens, added the Raynox 2.5× multiplier on the front and set up on the table out the back yard.
Next step: Fridge Raid. I "borrowed" some of my wife’s freshly purchased fruit and vegetables - for experimental purposes. This phase concluded abruptly when she discovered me outside, crouched over her fresh broccoli and cauliflower like a mad scientist.
I quickly applied some Band-Aids to my wounds and offered explanations. My argument (and I thought it quite a good one) that a little dirt helps build character & immunity was, regrettably, not persuasive.
Anyway…
Can you guess what this is a macro of? Clues:
1. It is not the eye of an alien that recently landed in our backyard.
1a. Bonus reassurance: it is also not the other end of said alien (you’re welcome).
2. These regularly appear in my overnight oats, sandwiched between banana, yoghurt, and an irresponsible amount of Biscoff spread.
3. Fats Domino once found his thrill on this hill.

MALACHI: "Oh! Hullo Daddy! Merry Christmas!"
DADDY: "Err… Merry Christmas, Malachi. What are you doing sitting on my strawberry macaron? I was just taking a break from Christmas wrapping to have a well-deserved macaron!"
MALACHI: "What does it look like, Daddy? I'm having an elevenses of macarons course."
DADDY: "Oh! Do you think this is the best place to have your elevenses of macarons Malachi?"
MALACHI: "Oh yes Daddy! It's a capital place to take my elevenses of macarons. It's lovely and comfortable to sit on, and I just love the colour! Don't you, Daddy?"
DADDY: "Well yes I do Malachi, but…" *Sighs.* "Oh well, I suppose I’ll have the Biscoff one instead."
MALACHI: "I’m afraid you can’t have it, Daddy. "
DADDY: "Why not, Malachi?"
MALACHI: "Well, I should have thought that was obvious, Daddy! I’m using it as a tea table for my teapot! "
DADDY: "Oh… well, I’ll just…"
MALACHI: "No you won’t, Daddy!"
DADDY: "But you don’t even know what I was going to say, Malachi."
MALACHI: "Yes I do, Daddy. You were going to have the chocolate macaron, weren’t you?"
DADDY: "Well," *Blushes.* "Yes, I was, Malachi."
MALACHI: "You are so predicable, Daddy." *Tuts and shakes head.* "Well, you can’t have the chocolate one either, as it is currently being used by my milk jug and sugar bowl. "
DADDY: "Oh…" *Disappointed.* "Then how am I meant to have my elevenses of a macarons if you are sitting on it or using it, Malachi?"
MALACHI: "Well, I'm not entirely sure Daddy, but I'm sure you will think of something."
Oh dear! Malachi is at it again! The theme for "Looking Close… on Friday" for the 6th of December is "food with layers". When I saw the theme, I immediately thought of the small selection of brightly coloured macarons that I recently bought from "Le Petit Gâteau" a few months ago. I bought them for photography purposes, and lo and behold, they came in handy for this week’s theme. As it is December, I give my photostream a festive flavour, and thus Malachi is photographed on one of my wrapped Christmas boxes in front of my small Christmas tree decorated with my hand made baubles. I hope you like my choice of subject for this week’s theme, and that it makes you smile.
Malachi I acquired in mid-March 2020 (and mid Coronavirus) from a wonderful Melbourne stalwart toy shop: Dafel Dolls and Bears, when I went looking for a present for one of my goddaughters. Malachi is designed by Mary and hand-made by Wendy Joy in Australia. He has articulated arms and legs, and an extremely sweet face. Malachi was the name he came with, written by hand on his little tag. Both his floral tea set, and his miniature selection of macarons come from Beautifully Handmade Miniatures in Kettering in England.
Tawny Funnel found in mixed deciduous woodland in Salcey Forest, Northants. Identified by its shiny dark orange/red cap fading at the margin, decurrent tooth, white milk changing to yellow but mostly by its lovely sweet smell which reminds me of Biscoff.

New Forest Donkeys
There are many different types of livestock put out to pasture in the New Forest including the famous New Forest ponies, pigs and cows. One of the more overlooked animals which can be found in the forest is the New Forest Donkey. Found throughout the Forest, only around 300 donkeys are turned out into the forest in comparison with the 3,000 New Forest ponies. Male donkeys (known as a ‘Jack’) and female donkeys (known as a ‘Jenny’) are all owned by the New Forest’s commoners, people who live here and have rights to let their animals graze the open forest - this tradition goes back many hundreds of years.
I am going to be a bit ON/OFF with Flickr this week as I am looking after my eldest grandson who is eight, whilst his parents are in the Greek Islands. As well as doing the school run, I need to deliver him to various after school clubs which include a piano lesson, swimming, dance and football training. It appears his clarinet is missing, he needs it for his school music lesson which is on Thursday, so I will make a special trip to my daughter’s house to collect it. If it is not there then it will be at a long stay car park at Gatwick airport! I also have to check his homework which needs to be handed in at the end of the week. I could not believe just how much 'stuff' came with him and for his feet alone; school shoes, black trainers, white trainers, football boots (studs), football boots (astro), tap shoes and crocs! I have also agreed that I would take him to the local playpark, cycling in the forest and that he can make a Biscoff cheesecake! Oh, and there is a school disco as well!
4 are filled with sweetened cinnamon flavored red bean paste and 4 with Biscoff cookie butter spread. I bought a larger iron for myself that makes 2 bigger fish at once instead of 4 smaller fish.
Speculaas cut into shape of gingerbread man. This was taken in the beginning of the decorating the cookies, when one cookie already show a happy, smiley face then I snapped a shot.
Filled with Cinnamon red bean paste, Biscoff cookie butter, mini chocolate chips & plain chocolate & vanilla with no filling.

Today is my birthday! I dread it not because I dislike getting older (let's just say I'm in my thirties) but because I can't stand the attention. One time my best friends threw me a huge birthday party but I didn't show up! It made me too anxious. My two best friends understood wholeheartedly though and on another date, we intimately had dinner with just the three of us; a memory I reveled in more than playing host to a room full of people I would probably only see once a year. Introvert problems.
Getting older is a privilege not many have. So it is my honor to age with as much grace as time will afford me. It is also my continued privilege to keep creating for you all in Second Life.

Today marks Mabon, the Autumn Equinox. As we enter the dark half of the year and the nights draw in, it's a time to settle in and enjoy some cosy treats. Freshly baked toffee cake with Biscoff filling accompanied by a caramel latte — broke out my hand-made Green Man mug — you can just about make out his face through the (pottery) greenery!
All kinds of pumpkins, squash and gourds were on sale at Kenyon Hall farm, near Lowton. I may have relocated the orange one for the purpose of this image. I may also have stopped for a coffee and a slice of their delicious biscoff 'rocky road' while I was there taking photographs of pumpkins :-)

No matter if they've been renamed, I'll always call them (like most folk still do) "Speculoos."
Unfortunately, due to political correctness and Woke ideology, Zwarte Piet (assistant to Saint Nicholas - see photo in comments) has been removed from the packaging. Still, he's very much alive in many ways in Flanders and the Netherlands.
