For my first new recipe for 2023: slow roasted beef stew.
It was an easy recipe with a few twists in how I usually make the stew: the different methods, spices, and ingredients. This was a hit as the meat just melted off the fork.

Last night's dinner. And tonight's. And tomorrow night's. And the next night's. And.......
Seein' as how I'm kinda lazy when it comes to cookin', when I make a meal, I like to make one that'll last a while, one that we can feed off of for several days, so all I have to do is warm up the leftovers for as long as possible before I have to go to the effort of cooking something fresh.
And, how I do love my cast iron dutch oven, along with my cast iron frying pans. They're not only the best to cook with, but when properly seasoned, they're easier to clean up than the fanciest of the no-stick coated pans. Like I said, I'm kinda lazy...☺
Beef stew, my favorite dutch oven delight. And man, when I get the urge for a stew, I know no restraint; I load it with everything I can think of. Or maybe I should say overload it. Even though there's over two pounds of meat in here, there's so much other stuff, I can just hear that little old lady saying, "where's the beef?" Actually, I think my favorite part of making a stew is I get to use my cast iron dutch oven, by far my favorite kitchen toy.

TK-1110: And what's that I smell? That aroma is simply scrumptious!
STB: Oh, just a quick beef stew surprise I slaved over the stove for, for several hours. Thank you very much.
TK-1110: Um, beef stew "surprise" doesn't sound too appetizing. Just saying.
TK-432: I suspect there might be a story behind our supper, but let's save that for later. OK?
STB: Guys, you're so impatient. I'll stop for now, but don't touch anything! The set stays, and I'll just snap my last shots later.

Can't think of much to say about it...but, it was very tasty as usual... I like to make a big stew about once a month so I can freeze some for lunches and "plan-overs" ... you know, for days when you don't feel like cooking. Just take some out of the freezer... et voila...supper....

I'm fascinated by the center of light at the bottom, and how their appears to be light shooting up and around it..does any one else see this? maybe I just don't know enough about the moon..
And it's suddenly dinner time! This broth is a little sweet and does mighty well with some tearable bread.

It's been a long, busy month for Stormtrooper Bruce, having been assigned duties in Palpatine's Haunted Alley, specifically running the Haunted Cemetery. But now the end of the month is finally here. Time to unwind, relax and not worry too much about his entry in the Bake Off.
TK-432: Well now, your quarters are starting to look normal again. But that spider still creeps me out, no matter where you put it!
STB: No worries, this time next week, you'll never know it was here. And by the way, I really appreciate you two helping me with my decorations. But I think I pulled something trying to cram that bookcase in my storage unit.
TK-1110: Your storage unit being that empty corner of Fett's quarters. But I think I did hear something snap, or crack when you shoved it next to the wall. You just sit back, and we'll take it from here.
TK-432: For starters, I'll take a bowl of that stew and a roll. Then once the movie is over, I'll do the honors of pulling our next movie title out of your Cauldron of Horrors.
TK-1111: And while he's doing that, I think I'll take a slice of your Chocolate Ghost cake! Dessert first, I always say.
STB: Thanks guys, you're the best. And once our movies are over, can one of you take that cart down to my 'storage unit' before you leave?
TK-432: Bro, we're gonna be here for the rest of the weekend. Aside from whatever you pulled, we know you're going to be a hot mess waiting for the Bake Off results. You need all the moral support you can get!
STB: In other words, you two are going to loaf around, watch movies, stuff your faces, and down multiple coolers of cold ones? Just like every weekend! The results won't come for weeks. You know how the P likes to torture us.
TK-1110: And so the Pity Party begins. I'm not sure what's worse? Your moping around, waiting for the results, or the so-called prizes the P awards the winners?
STB: What's worse is someone still needs to take that cart down to storage... and that spider needs to be packed up, too!

in 25 minutes you have a hearty beef stew. We haven't been out to the stores for over 2 weeks. This stew will last a long time. We will try to stay out of the stores for at least another 2 weeks or more.

This was really taken on New Years Eve 2015, but I am toasting new opportunities in 2016 rather than missed ones in 2015. I got this black wiggle dress from Coquetry about a year ago and have worn it to Leslie Anne's a few times. Maybe I'll get a chance to wear it to a nice venue in 2016, possibly a concert. I doubt if it ever sees a party because the once active TG "community" in Houston is very fragmented. My own budget and apartment is too small to host a real party beyond three or four friends for dinner.
Maybe I'll build the 2% grade to connect the upper and lower level staging yards on my model railroad layout and build some spectacular mountain scenery. I've got all the track, but the new roadbed grades will be a challenge I haven't constructed before. I have built mountain scenery before and yearn to turn my layout into a thing of scenic beauty. That would be a cause for celebration.
2016 is likely to be a year that will make or break democracy in the United States. We either fix it, or it will sink into corporate fascism. The very same bigoted politicians who hate transsexuals like me also oppose light rail expansion in my city or anything for the public good. A few months ago, the bigots lied to the public and defeated the Houston Equal Rights Ordinance, but we managed to elect a Black mayor. As a civic activist I plan to register voters in my district and promote Progressive candidates for the 2016 elections in November.
I made Beef Stew for tonight's Rainbow Gathering at The Lodge. It was my first time using the Slow Cooker Darek's Mom got us for Christmas. It didn't turn out delicious, but it was good.
2026 Recipe 12 of 50: Beef Stew
Sometimes the easiest recipes are the best recipes. One of the best methods for a beef stew (IMHO) is a basic low and slow crock pot. I could cook it in a dutch oven on the stove or in the oven, but the crock pot just makes it all the easier- plus with the crock pot liners, it's a breeze.
My go-to recipe is also just as simple:
Browned Chuck Roast cubed
Carrots
Potatoes
Onion (1)
Beef Stock (low sodium)
Bay leaves (2)
Red wine (if available)
Cook on low for 8 hours
