My husband and I had some overripe bananas, and instead of discarding them, we decided to make bread. We needed 6 bananas for a double batch but only had 4. We went to the market, where they typically have overripe bananas, but this time they didn't. Sadly, we thought we would only be able to make one loaf. After leaving the market, we visited a friend to deliver a birthday gift for his daughter, and it turned out he had 2 overripe bananas he was about to throw away! It's interesting how we took a moment to bring a little joy to a friend and ended up with a delightful surprise. God truly works in mysterious ways!

Bananas were getting overripe so it was time for another banana bread. I heard that banana bread has become the unofficial baked good of this stay-at-home times. Not good with food photography but this looks ok to me. Not an original concept though.

It's been a busy morning in the kitchen, started around 6am to make this for today's Sweet Sunday & for snacks throughout the week. While this was in the oven, I started on the soup for tonight's dinner.

 

Luckily for me, the soup I'd decided on was minimal effort and came together rather quickly and is simmering on low for family dinner later this evening!

 

So for those interested, I found this recipe at Sally's Baking Addiction.

 

Recipe:

 

Ingredients:

Banana Bread

- 2 cups of white whole wheat flour (or all-purpose flour)

- 3/4 teaspoon of baking soda

- 1/2 teaspoon of salt

- 1 teaspoon of ground cinnamon

- 1/2 cup of light brown sugar, not packed

- 4 Tablespoons of unsalted butter, softened to room temperature

- 2 large eggs

- 1 and 1/2 cups of mashed very ripe banana (about 3 bananas)

- 1/3 cup of plain or vanilla yogurt (I used greek vanilla bean yogurt)

- 1 teaspoon of vanilla extract

 

Cinnamon Swirl

- 1/4 cup of granulated sugar

- 1 teaspoon of ground cinnamon

 

Simple Glaze

- 1/2 cup of powdered sugar, sifted

- 1 Tablespoon of heavy cream (or half-and-half or milk)

 

Directions:

1. Preheat oven to 350F. Spray a 9×5-inch loaf pan with cooking spray. Set aside.

2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.

3. In a separate large bowl, beat the brown sugar and butter with a stand or handheld mixer on medium speed until well blended – about 1 minute. 4. Add the eggs one at a time, beating well after each addition.

5. With a wooden spoon, stir in the mashed banana, yogurt, and vanilla.

6. Slowly add in the dry ingredients. Batter will be thick. (I just dumped them all in once, and it seemed to work out okay, just needed a little more folding)

7. Pour half of the batter into prepared loaf pan. 8. Sprinkle with cinnamon-sugar swirl ingredients. 9. Top with remaining batter.

10. Bake for 40-45 minutes (50-55 minutes if your oven sucks) or until a wooden pick inserted in center comes out clean.

11. Cool 15 minutes in the pan on a wire rack. Remove from pan and cool completely on the wire rack.

12. While the bread is cooling, make the glaze in a small bowl by combining the powdered sugar and heavy cream. Add more powdered sugar or cream until you reached desired thickness.

13. Drizzle over banana bread.

So today I had to stick close to home because the landlords were coming to fix something in the house.

 

Being stuck inside I figured it would be a good time to clean out the fridge, turned out the eggs were about to pass their best before date and I had a couple bananas from a neighbour who emptied their fridge into mine before snowbirding somewhere warm for a couple months... so what choice did I have?

 

It was banana bread time; just a half batch today because I normally prefer to at least double the amount of bananas, but this will do for a quick snack!

Not trying to copy all the fabulous food shots taken by my flickr friends lately; I was given this beautiful dish for my birthday from my brother and sister-in-law and wanted to show it off in a photo. They brought it back with them from a recent trip to New Zealand (where she grew up). Banana bread is one of the very few things that I make. No domestic goddess here, that's for sure!

Happy new year everyone!!! We're eating one loaf and my friend David got one, so there is one left. Our neighbor Judy is a likely candidate.

 

Here's the recipe so you can make a loaf of your own:

 

1/2 cup shortening

1 cup sugar

2 ripe bananas

2 eggs

2 cups of flour

1 teaspoon salt

1 teaspoon vanilla

 

Bake in Loaf Pan at 350 degrees for 1 hour or until toothpick comes out clean.

blahh i didn't take many pictures today, but i got my film back from being developed so i found a loophole :)

Recipe from Smitten Kitchen (I added 1 cup of chopped walnuts.) and oh dear sweet mercy is it yummy!

Here if anyone is interested:

100g soft butter, 200g brown sugar, 1 tsp salt, 2 eggs at room temp (separated), 1 tsp vanilla extract, 2 tbsp cornflour, 4 medium overripe bananas, 1/2 c buttermilk, yogurt or sour cream, 400g flour, 1/2 tsp bicarbonate of soda, 1 tsp baking powder and 1 tsp ground cinnamon (optional but you can’t taste it and it enhances the flavour)

 

Preheat oven to 180 Celsius (350 Fahrenheit) and grease a metal loaf pan with olive oil. Cream together the butter, sugar and salt until very light in colour and the sugar has started to dissolve. Beat in the egg yolks, vanilla and cornflour and set aside. Mash bananas until smooth and creamy, then mix in the yogurt and pour over the butter mixture. Sieve over the flour, bicarbonate of soda, baking powder and cinnamon then mix everything until just combined. Beat egg whites to soft peaks and fold into the batter. Pour into the prepared tin, top with thin banana slices and a decent sprinkle of raw brown sugar and bake in the over for 45-60 minuets, until risen, set and golden - this really depends on your oven. Cool in the tin for 15 mins before transferring to a wire cooling rack.
