i cooked a fresh batch of lamb bhuna in the slowcooker a couple of days ago. then boxed and in the freezer for as and when.
this is the first portion to be thawed, slowly reheated, and finally on the plate to be eaten alongside servings of vegetables and salad

a portion of slowcooker sticky toffee pudding reheated in the countertop mini oven topped with raspberry sauce and shop bought natural yoghurt
although delicious i wasn't happy with the look of yesterday's portion of slowcooker sticky toffee pudding. maybe i should have continued the slowcooking for another hour and then cut a portion for dessert. today i decided to experiment and reheated a defrosted slowcooker portion in the oven, much better result.

i substituted the oven for the slowcooker as my oven would have been problematic having electric bars top and bottom flic.kr/p/2m3gaso i was worried i might overcook the base and undercook the rest - very uncertain
using the slowcooker
i had a few centimetres of water at the bottom so that the slowcooker wouldn't dry out
placed kitchen paper towels across the top to soak up condensation (i didn't want moisture finding it's way into the loaf)
then covered with the lid
the slowcooker was on for five hours on low from start to finish
a couple of times i did wipe moisture off the inside of the lid but never removed the paper towels. whether that was a good idea i don't know but it made me feel happier
when i finally removed the loaf from the slowcooker there was no water left in the bottom of the bowl
next time
maybe add a few extra centimetres of water at the beginning
check and top up during the cooking process
cook the loaf for slightly less time
or maybe do all three options :)

after the hour the dough cut in half
more kneading to one half, then rolled and pulled to shape for the preheated cast iron pan that had been lightly wiped with olive oil

flipped over when ready

i've just read, the ingredient measures are for a 5.5 litre slow cooker. measures should be adjusted for a smaller slow cooker.
my slowcooker is 3.5 litres. that explains why my pudding wasn't cooked after 4 hours. next time i will halve the measures
the recipe recommended 4 hours but it didn't look cooked so i left it for longer, another 9 hours. the lid was not removed at any time during the cooking. the setting remained on 'low' throughout the cooking (equivalent to the heat of a light bulb)

i have made another sticky toffee pudding and kept the same quantity of ingredients, no adjustment. cooked on 'low' for 16 hours. it was fine

i've just read, the ingredient measures are for a 5.5 litre slow cooker. measures should be adjusted for a smaller slow cooker.
my slowcooker is 3.5 litres. that explains why my pudding wasn't cooked after 4 hours. next time i will halve the measures
the recipe recommended 4 hours but it didn't look cooked so i left it for longer, another 9 hours. the lid was not removed at any time during the cooking. the setting remained on 'low' throughout the cooking (equivalent to the heat of a light bulb)

over the past week i've been making jams and sauces. all full jars now in the fridge for as and when. only one example of each shown raspberry & blueberry jam, raspberry & kiwifruit jam, mango sauce and plum butter

presented on hand painted dragon design fine china saucers, made in japan, charity shop find bought with jug and sugar bowl, sadly no cups

1. raspberry and blueberry jam
approximately 1:1 ratio fruit to sugar with added lemon juice
fruit cooked in lemon juice, blended using hand blender, sugar added, mixture first heated in a saucepan on the hob, then poured into slowcooker and left cooking for many hours on the lowest setting with lid off centre to allow the jam to reduce and thicken, occasionally stirred (saucer top right)
2. raspberry and kiwifruit jam

mangoes peeled, cut into pieces, placed in the nutribullet with a hint of lemon juice, blitzed until consistency that of a sauce (saucer top left)

my past jam making efforts have been hit and miss, more miss than hit, too often overcooked, though edible. i thought i would attempt the same tried and trusted method that i've used to make plum butter, the slowcooker www.daringgourmet.com/plum-butter-pflaumenmus/ (front row jar/saucer bottom left)
happy with the result and would make my jam that way again.
to reduce the consistency of the fruit/sugar the slowcooker was on for many hours. if the slow cooker is full for batch cooking it can be on for up to 18 or even 24 hours, the 'low' setting from start to finish.
to reduce the cooking time make less jam, reduce the quantity of fruit/sugar. as a rough guide a slowcooker half full of fruit/sugar will halve the cooking time.
apart from the occasional stir, the slowcooker was left alone for hours to work its magic. the last few hours of slowcooking were with the lid moved to release the steam and allow reduction. cooking stops when i'm happy with the consistency, no hard and fast rule. the slow cooker is energy efficient www.conserve-energy-future.com/are-slow-cookers-energy-ef...this for me was very much experimental so i was watchful. the ingredients are too good to waste

tinned pinto beans and ready cooked beetroot can be used but i cooked the raw pinto beans and fresh beetroot in preparation for this recipe
i substituted the oven for the slowcooker as my oven would have been problematic having electric bars top and bottom flic.kr/p/2m3gaso i was worried i might overcook the base and undercook the rest - very uncertain
using the slowcooker
i had a few centimetres of water at the bottom so that the slowcooker wouldn't dry out
placed kitchen paper towels across the top to soak up condensation (i didn't want moisture finding it's way into the loaf)
then covered with the lid
the slowcooker was on for five hours on low from start to finish
a couple of times i did wipe moisture off the inside of the lid but never removed the paper towels. whether that was a good idea i don't know but it made me feel happier
when i finally removed the loaf from the slowcooker there was no water left in the bottom of the bowl
next time
maybe add a few extra centimetres of water at the beginning
check and top up during the cooking process
cook the loaf for slightly less time
or maybe do all three options :)

festive blueberry and lime jam blended with cinnamon and cloves cooked in the slowcooker (spices optional) decanted into four jars

together with cloves and cinnamon powder
no added water
cooking using the slowcooker started on 'high' setting for 3 hours
then turned to 'low' setting for 14 hours (energy cost of a light bulb)
to reduce and thicken i moved the lid slightly to let the steam out
for the latter hours of slowcooking on 'low' setting
i finished when i was happy with its rich, sumptuousness
cooking can be ended much earlier for the 'set' to be more sauce like or jam like, just depends on personal preference
