This is one of many buckets used to collect sap which is boiled down to make syrup. The "sugar shack" in the background is where its boiled down. There is enough syrup made to have pancake breakfasts that are open to the public. Also included are tours of the big woods where they collect the sap as well as the pioneer village nearby.

Tonle Sap Lake is the largest freshwater lake in Southeast Asia. Also called Boeung Tonle Sap, it has one of the world’s most vibrant ecosystems. There are different species of wildlife in and around the lake, which helped to sustain and grow the ancient Khmer civilisation. It's also famous for its fascinating local communities and their floating villages.
Located in Siem Reap, the massive lake is 250 km in length and 100 km across at its widest point, making it seem like an inland ocean because it is impossible to see the opposite shore from ground level. Surprisingly, it's fairly shallow, with a maximum depth of only 10 metres.

The week was mostly too cold for the sap to run. It came in dribs and drabs throughout the week, but on Thursday the weather warmed up and the sap ran quite well. For a first time experiment in home Maple syrup production, we got about three gallons of sap on the Thursday and the early part of Friday morning. So far I didn't burn any. I figured that if it went well, then next year I could prepare in advance for a more substantial effort. So far, so good.
