Rice cultivation is the main livelihood in Bali. Wayan, a young Balinese man proudly presents the harvest on the road in front of a village temple. Many hands have harvested the rice and now it will be picked up for further processing.

Leaving the Malagasy capital, Antananarivo, from the south via the N7, one of the few paved roads (I don't say in a good condition) of Madagascar, in the direction of Antsirabe, the landscape changes quickly.
Hills and paddy fields are emerging, dotted with hamlets with houses with red brick walls and thatched roofs. It is the Highlands region. The people, "those who inhabit the heights" or Merina, are excellent farmers.
The Merina people, a Malayo-Indonesian ethnic group, use traditional methods to cultivate their rice paddies in the plains surrounding the villages.
Their language is the basis of the current and official Malagasy language.
Rice paddies now take up two-thirds of the country’s cultivated area.
Madagascar is the second-leading per capita consumer of rice in the world (about 246 pounds, or 112 kg, per capita per year, behind Myanmar at 462 pounds, or 210 kg), but it is not a major producer (producing 2.8 million tons, it ranks approximately twentieth in the world).
There is a rice processing factory in Cai Rang that welcomes tourists. It produces rice paper and rice noodles.
Rice paper is indispensable for Vietnamese spring rolls. It is also provided in restaurants when you order something such as fish meat and prawn so that you can prepare your own spring rolls yourself.
It is the closest thing to Mexican corn tortillas.
Diameter of the rice papers in the photo was approximately 50 cm. They may be sold by cutting into smaller pieces.

I cook the rice like pasta. Use a large pot of salted water and cook it until it's al dente, then drain well.
It is a good way to get rid of starch.
Place it back on the burner that had been turned off, cover with the lid and let it continue cooking for 15-20 min.
Add butter or oil if you want to, and you'll have any volume you like of fluffy rice with separate grains.
On the way between Da Nang and Hue, these rice paddies were flooded by heavy rains that came after the rainy season normally ends. Across the fields you can see a church, probably Catholic, and a school. About 10% of the population is Christian, mostly Catholic, from French colonial days.
The early morning sunlight wakes up the rice terraces… it was amazing to see how the farmers build the terraces into the side of a mountain.
After the harvest, the rice fields in the wintry Italian Po Plain lie fallow and dry. A period of rest and regeneration of the soil begins until the fields will be flooded again in spring and the new rice will be planted.

Nach der Ernte liegen die Reisfelder in der winterlichen italienischen Poebene brach und fallen trocken. Eine Zeit der Ruhe und Regeneration des Bodens bricht an bis im Frühling die Felder wieder geflutet werden und der neue Reis gepflanzt wird.

. . . The view from the corner of Rice Road and Seeley Road this morning, just north of Kalkaska. The colors are spotty, with some trees bare, and others mostly green yet!
The weather today is also spotty, with sunshine, dark clouds, sprinkles, a brief downpour, and then repeat as needed!
