Bean burrito bowl made using a corn tortilla, and layered with cauliflower rice mixed with taco seasoned beans, a variety of lettuces, peppers, tomatoes, avocado, cheese, salsa, cilantro, lime crema and hot sauce. Finger-licking good!
Meatless Tuesday - Lentil mushroom balls with spicy ratatouille over rice noodles. A bit of work but worth it.

Cosa accomuna Leonardo da Vinci, Paul Mc Cartney, Gianni Morandi e Lisa Simpson? Una scelta importante: quella di non mangiare carne.
Come più di 4 milioni di italiani: lo dicono i dati Euripes 2013. I motivi di questa decisione? L’amore per gli animali, ma anche il proprio benessere e quello dell’ambiente.

Basta un giorno!
Per cominciare, proviamo a non mangiare carne un giorno alla settimana! Secondo un calcolo della Lega anti vivisezione, a fine anno avremo risparmiato 910 metri quadri di foresta, 390 chili di cereali, 403.000 litri d’acqua e un bel po’ di gas serra.
In molti Paesi, come Stati Uniti e Inghilterra, i “lunedì senza carne” sono diffusi da tempo. In Italia c’è il “Mercoledìveg”!
Grassi buoni, grassi cattivi.
Gli studi degli esperti di tutti i Paesi sono concordi: molte patologie, tra cui le “malattie del benessere” – obesità e sovrappeso, ipertensione, diabete, problemi cardiovascolari – sono causate da una dieta ricca di carne e grassi animali. L’alimentazione migliore? Molti cereali, frutta e verdura fresche, legumi e, per condire, olio extravergine d’oliva.
Acqua e terra
Per produrre ciò che mangiamo serve molta più acqua di quanto immaginiamo: 1.600 litri d’acqua per un chilo di pane, oltre 15.000 litri per un chilo di carne di manzo.
Per non parlare del suolo: secondo un calcolo, un ettaro di terreno può produrre 10.000 chili di pomodori o – indirettamente – 50 chili di carne di manzo. È evidente che una dieta ricca di carne consuma molte più risorse.
Se tutti gli abitanti del pianeta continueranno a mangiare carne in grandi quantità, nel 2050 non ci saranno acqua e cibo per tutti.
Camion e mucche
Immaginate le emissioni causate in un giorno solo da auto, camion, aerei e navi: tutte insieme sono di gran lunga inferiori a quelle generate dall’allevamento industriale.
Lo dice uno studio della Fao: il 51% dei gas serra è emesso dagli allevamenti. Il principale colpevole? Il metano originato dai processi di digestione e dalle deiezioni degli animali.
Al top della catena
Gli animali occupano un posto più alto delle piante nella catena alimentare. Quindi hanno inevitabilmente una maggiore concentrazione di residui chimici: quelli impiegati per colti.

Parliamo di soldi?
Quanto costano le proteine necessarie al nostro fabbisogno? Provate a fare un calcolo: un etto di fagioli crudi ne contiene circa 23 grammi, un etto di prosciutto crudo circa 26. Quale di questi cibi costa di più?

Super stoked on how this pizza turned out. Finally got a good dough recipe going that I'll document at some point on The Rogue Baker.
It was also Meatless Monday, so we kept this vegetarian—toppings included asparagus, artichoke hearts, red onion, and arugula. But we had to put an egg or two on it, as well as some aged manchego cheese. The caramelized bits are due to broiling for a couple of minutes at the end of baking.
A++, will make again.

Bowl made using corn tortilla baked in a fluted bowl. Extra firm tofu crumbles fried crispy. Layered in bowl: Lettuce, a little shredded cheddar, smokey black beans, tofu crumble, some more shredded cheddar, cilantro, green onions, a little more cheddar, lime crema and sriracha sauce. I forgot to add sliced jalapeno's but it was still great.
Can't wait to do this again!
Jamie and I made this grilled cheese and tomato soup for Meatless Monday. It was so delicious that we will mostdef make it again.
The meal was inspired by our friend Jamie's Tomato Soup with Grilled Cheese article. We changed/simplified the soup, which was delicious. The grilled cheese featured colby-jack cheese, but we simplified that too for a quick weeknight meal.
Tomato Basil Soup
2 tablespoons of olive oil
1/2 medium sweet onion, chopped
3 cloves of garlic, minced
2 - 14 oz. cans of diced tomatoes
1 - 14 oz. can of diced tomatoes with garlic
2 cups of stock (chicken or vegetable)
1 tsp of kosher salt
1 tsp of sugar
1/2 tsp of crushed red pepper (more or less to taste)
1/4 cup of heavy cream
3 tablespoons of fresh basil, julienned
In a heavy dutch oven, saute onions on medium heat until softened, about 5 minutes. Add garlic and stir until fragrant, about 1 minute - being careful not to burn the garlic. Add the diced tomatoes including all the juices. Add chicken stock, salt, red pepper, and sugar. Cook the soup on medium at a simmer for 10 minutes.
Transfer 2/3 of the soup to a blender and puree until smooth. Return to pot. The consistency will be smooth with some chunks.
To finish, reduce the heat to low and stir in heavy cream and basil.
Grilled Cheese
Made after the soup was pureed...
Per sandwich:
2 slices Pepperidge Farm Farmhouse Sourdough Bread
3 slices Colby-Jack deli slices
Butter — we used Papa John's garlic butter from last night's pizza :) Hey, it was available and delicious!
Heated the stove-top castiron griddle over low heat, preheating it while the soup finished. The outside of the bread was buttered with the garlic butter/spread stuff. Three slices of cheese were placed inside, and the sandwhich pressed with a weight. The bread was sturdy enough to resist the weight, but after griddling, it was crunchy and delicious.
