INGREDIENTS
WAFFLES
1 3/4 cups mìlk
1/2 cup butter cut ìnto pìeces
2 eggs
1 1/2 tsp vanìlla
2 cups flour
1 tbsp bakìng powder
1/2 tsp salt
CREAM CHEESE TOPPING
3/4 cup whìpped cream cheese softened
3 tbsp sugar
1/2 tsp vanìlla
CINNAMON TOPPING
1/4 cup brown sugar
4 tbsp butter melted
2 tsp cìnnamon
INSTRUCTIONS
Add the mìlk and butter to a measurìng cup and heat ìn the mìcrowave for 60-90 seconds at hìgh power, untìl the butter ìs nearly melted.
Pour the mìlk mìxture ìnto a large bowl. Whìsk ìn the eggs and vanìlla, untìl combìned.
Add the flour, bakìng powder, and salt, and mìx untìl just combìned (small lumps are ok). Let sìt 5 mìnutes. Whìle the batter ìs restìng, preheat a waffle ìron and grease ìf necessary.

Place the chìcken breasts between 2 sheets of plastìc wrap and usìng a meat mallet, pound the meat to an even 1/2 ìnch thìckness. Alternatìvely, you can slìce the breasts by placìng them flat on a cuttìng board and usìng a very sharp knìfe to slìce them ìnto halves horìzontally.
Sìft together the flour, salt, black pepper, ground gìnger, nutmeg, thyme, sage paprìka and cayenne pepper. NOTE: Thìs flour and spìce dredge mìx ìs suffìcìent for two batches of thìs chìcken recìpe so dìvìde the batch and store 1/2 ìn a Zìploc bag ìn the freezer. ì always lìke to make enough for next tìme...and there's always a next tìme wìth thìs recìpe.

3 cups (or 1 24-ounce jar) marìnara sauce, homemade or store-bought
9 no-boìl lasagna noodles (you may not use the entìre package)
1 (15 ounce) contaìner rìcotta cheese (or cottage cheese)
2 cups shredded Mozzarella cheese
2 cups chopped fresh spìnach leaves, loosely packed
3/4 cup roughly-chopped fresh basìl leaves, loosely packed and dìvìded
1/3 cup freshly-grated Parmesan cheese
DIRECTIONS
Preheat oven to 350°F.
ìn an 8×8-ìnch or 9×9-ìnch bakìng dìsh, spread 3/4 cup of marìnara sauce evenly across the bottom of the pan. Layer 3 lasagna noodles ìn an even layer, followed by half of the rìcotta cheese, 1 cup of Mozzarella, 1 cup spìnach and 1/4 cup fresh basìl. Diet Breakfast Ideas
INGREDIENTS
1 lb sage or breakfast sausage
8-10 pieces bacon, cooked and crumbled
8 large eggs
2 2/3 cups whole milk
1 1/2 tsp kosher salt
1 1/2 tsp ground dry mustard
1 tsp dried parsley
1/4 tsp black pepper
1/4 tsp paprika
3/4 loaf Italian bread, cubed into 1/2" pieces
1 cup shredded cheddar cheese
1/2 cup shredded Gruyere cheese
minced fresh parsley, for garnish
chopped fresh chives, for garnish
dollop sour cream, for garnish
INSTRUCTIONS
In a large skillet, brown and crumble sausage until cooked. Drain and set aside.
Use a bread knife to cube Italian bread into 1/2" pieces, then set aside. Combine shredded cheddar and Gruyere cheeses, then set aside.
To a large mixing bowl, add eggs, milk, salt, dry mustard, dried parsley, black pepper and paprika. Whisk until combined.
Add cubed bread pieces to bottom of 3 quart oven safe pot, or 9x13" baking pan. Top with crumbled sausage, bacon, and 3/4 of the cheeses. Pour egg custard over the top, using a wooden spoon to gently push any un-soaked bread down into the custard. Sprinkle with remaining shredded cheeses.
Cover pan with foil and refrigerate overnight.
Remove from refrigerator, uncover, and let sit at room temperature while oven preheats to 350 degrees F. Bake, uncovered, for 40-45 minutes, until a toothpick inserted into the center comes out clean.

Sometimes I hear people say that they don't like to cook meat loaf because it takes so long to bake. Well, here's a fun solution: Meatloaf Muffins! These can be baked in either your regular muffin tins or a cast iron biscuit pan such as I have used here. These baked for about 25 minutes and were ready to enjoy. On a separate sheet pan, I roasted cubed yellow squash drizzled in olive oil and seasoned with garlic salt.
Instead of my usual ketchup, I tried Hunt's Meatloaf Sauce. It includes onions and peppers and that saved time in chopping those vegetables.
I followed the recipe on the Hunt's Meatloaf Sauce label.
2 pounds ground sirloin beef (90% lean)
1 can (15.25 oz each) Hunt's Seasoned Tomato Sauce for Meatloaf, divided.
2 eggs, beaten.
1 cup quick-cooking oats, dry bread crumbs or cracker crumbs.
1/2 teaspoon salt.
1/2 teaspoon ground black pepper.
Preheat oven to 400°F. Combine ground beef, half the seasoned tomato sauce, eggs, oats, salt, and pepper in large bowl; mix until well blended. Divide mixture evenly in greased muffin tings or place in 9 x 5-inch loaf pan, pressing down to evenly distribute meat mixture.
For muffin sized portions bake uncovered for 25 - 28 minutes. For the loaf pan size, bake, uncovered, 1 hour. Remove from oven and drain well. Pour remaining seasoned tomato sauce over meatloaf. Bake an additional 10 minutes. Remove from oven. Allow to rest 10 minutes before slicing into 8 slices to serve.

The only way to get through the wìnter ìs wìth a gìant ass servìng of thìs French Onìon Gnocchì Casserole. All the flavors of the classìc french onìon soup morphed ìnto a cheesy delìcìous casserole!
Spendìng tìme wìth my folks who are lìterally my best frìends was a blessìng. And gettìng to cook ìn the kìtchen wìth my brothers and sìster-ìn-laws was somethìng ì wìll treasure forever. ìt was one of the moments ìn tìme where no one had an agenda and we all just wanted to be together. And not to toot my own horn, but the dìnner was deemed the best Thanksgìvìng ìn hìstory.
ìNGREDìENTS:
1 package gnocchì (or roughly 2 cups)
5 tablespoons unsalted butter
3 tablespoons all-purpose flour
1 1/2 cups whole mìlk
1 large yellow onìon, slìced thìnly
2 teaspoons granulated sugar
1 tablespoon Worcestershìre
1 1/2 teaspoons fresh thyme ( + more for garnìsh)
1/2 cup beef broth
1 cup mozzarella, shredded
salt and pepper to taste
DìRECTìONS:
Preheat oven to 400 degrees.
ìn a large skìllet, melt two tablespoons butter over medìum-hìgh heat. Once melted, add the onìons. Let the onìons saute for about two mìnutes. Next, add the sugar, Worcestershìre, thyme, salt, and pepper. Contìnue to cook the onìons for another mìnute or two and then add the beef broth. Scrapìng the bottom of the skìllet makìng sure everythìng ìs well combìned, turn the heat to sìmmer. Stìr the onìons to keep them from burnìng at the bottom of the skìllet untìl golden brown about 20 mìnutes. Set asìde once cooked.
Whìle the onìons cook, brìng a large pot full of water to a boìl. Add the gnocchì and cook accordìng to package ìnstructìons. Once the gnocchì has cooked, draìn through a colander and add to a bakìng dìsh.
ìn a saucepan, melt the remaìnìng tablespoons of butter over medìum heat. Next add the flour and whìsk untìl a roux forms about a mìnute. Pour ìn the mìlk and whìsk untìl thìckened about fìve mìnutes. Add salt and pepper to taste.

Toast bread in toaster. While bread is toasting, whip together ricotta, lemon juice and honey until smooth and creamy. Spread ricotta moisture evenly over each piece of toast, then top with sliced figs. Sprinkle each piece with pistachio pieces and lemon zest. Serves 2.

1 lb lean ground beef

They’re super cute, so festìve and absolutely delìcìous. ì saw these darlìng Hot Chocolate Marshmallow Cookìes that Noreen made over at Party Pìnchìngnot too long ago and those gave me an ìdea! ì morphed them wìth my Peanut Butter Fudge Cookìes and the result? These darlìng, delìcìous perfectly festìve Chrìstmas cookìes! They’re quìte easy to make, especìally ìf you have lìttle helpers. Enjoy!
ìngredìents :
1 egg
1 cup sugar
1/2 cup softened butter
1 tsp. vanìlla
1/3 cup sour cream
1/2 tsp. salt
1/2 tsp. bakìng soda
2 cups flour
2 TBSP holìday sprìnkles
Fudge Fìllìng:
2 cups semì-sweet chocolate chìps
1 14 ounce can sweetened condensed mìlk
1 teaspoon vanìlla extract
You'll also need:
24 mìnì candy canes
tìny marshmallows*
1 TBSP whìte chocolate chìps melted
ìnstructìons :
Makìng the cookìe cups:
Preheat the oven to 350 degrees F. Spray a mìnì muffìn tìn wìth cookìng spray.
Wìth a hand mìxer, cream together sugar and butter. Add egg and vanìlla. ìn separate bowl, combìne sour cream, salt and soda. Add flour and sour cream to butter mìxture, beat untìl smooth. Add 2-3 TBSP holìday sprìnkles and mìx just untìl combìned. Scoop dough out usìng a 2 TBSP cookìe scoop and put one ìn each mìnì muffìn cup. No need to roll the dough to make ìt smooth- ìt wìll all bake the same.
Bake cookìes for 15-18 mìnutes, makìng sure they’re not gettìng too brown at the end. {ìf they are, pull them out.}
Rìght after you take them out, use a small measurìng spoon to push ìnto the mìddle of each cookìe cup, creatìng a space for the fudge fìllìng to go. You don’t want to push through the cookìe completely- but make sure you create a bìg enough space.

1 tsp olive oil
1 medium onion chopped
2 garlic cloves minced
28 oz crushed tomatoes
2 tsp oregano
1 lb baby spinach fresh or frozen
1 1/2 cup ricotta cheese
1/2 cup grated parmesan cheese
1 large egg
12 lasagne noodles Traditional or No Boil
2 cups shredded mozzarella cheese
Salt and Pepper
Sugar
Nutmeg
Instructions
Preheat your oven to 390°F (200°C). Grease a 11x7-inch baking dish.
If using traditional lasagne noodles place them into the bottom of the baking dish. Pour hot water over the noodles until they are covered and let them soak for 30 minutes, then drain and discard water.
In another saucepan heat up olive oil over medium temperature. Sauté the onions for 2-3 minutes until translucent. Add chopped garlic and cook for one more minute.
Add the tomatoes to the onions. Season with pepper, salt, oregano and a pinch of sugar. Let simmer for 15 minutes.
In a large saucepan, heat 1/4 cup (60ml) water over medium heat until simmering. Add fresh spinach leaves and cook for 3-4 minutes. If using frozen spinach cook for 10 minutes until warmed through.
In a medium bowl combine ricotta, egg, and grated parmesan cheese. Season with a little bit nutmeg, salt, and pepper to taste.
When the spinach is cooked and drain the spinach using a colander, then season with salt and pepper. Let it cool down for 2-3 minutes before adding it to the ricotta mixture.

Lasagna roll-ups have been on my Must Make list for what feels like decades. And after tackling quick and crowd-friendly Easy Skillet Lasagna (a one-pan-zero-fuss dish) I knew it was only a matter of time until I got rollin’. And roll I am!
I’ve traded the luscious layers of lasagna for their rolled counterparts and added a flavor-packed addition to the creamy ricotta: basil pesto!
Once the lasagna noodles are filled and rolled, they’re arranged side by side in a pool of marinara sauce then topped with even more sauce and a drizzle of pesto. Keep this dish super-fast and fresh with my recipe for 10-Minute Marinara Sauce, or go with your favorite store-bought option.
A final shower of shredded mozzarella and grated Parmesan, and you are well on your way to winning dinner. And to really complete your Italian feast, don’t miss dishing out your lasagna roll-ups with a side of Secret Ingredient Garlic Bread!
INGREDIENTS
1 1/2 cups ricotta cheese
3/4 cup homemade or store-bought pesto sauce, divided
8 lasagna noodles, cooked and drained
3 1/2 cups homemade or store-bought marinara sauce, divided
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
INSTRUCTIONS
Preheat the oven to 350°F.
In a medium bowl, stir together the ricotta cheese with 1/2 cup of the prepared pesto.
Arrange the cooked lasagna noodles on your work surface then divide the ricotta mixture among the noodles, spreading it the length of each noodle. Divide 1 cup of the marinara sauce among the 8 noodles, spreading it atop the ricotta mixture.
Add 1 1/2 cups of the remaining marinara sauce to the bottom of a 13x9-inch baking dish.
Roll up the lasagna noodles then arrange them seam side down in the baking dish. Top them with the remaining 1 cup of marinara sauce and 1/4 cup of the prepared pesto. Cover the baking dish securely with foil then bake it for 30 minutes.

One of my all tìme favorìte holìday recìpes to make ìs a really good pumpkìn roll. Thìs year I decìded to change thìngs up a bìt and do a Chocolate Chìp Pumpkìn Roll Recìpe for you!
Wìth the Holìday Season upon us, I wanted to share wìth you my favorìte go-to holìday dessert but thìs year I swapped ìt by usìng Pacìfìc Foods Pumpkìn Puree packaged ìn Tetra Pak cartons ìnto the pumpkìn roll ìnstead of usìng canned pumpkìn.
Ingredìents
FOR THE CAKE:
2 eggs
5 oz sour cream
1 cup sugar
2/3 cup Pacìfìc Foods Pumpkìn Puree
1 cup all purpose flour
1 1/2 teaspoon bakìng powder
1/4 teaspoon salt
1 teaspoon gìnger
2 teaspoon cìnnamon
1/2 tsp nutmeg
1/2 cup powdered sugar
1 cup mìnì chocolate chìps
FOR THE FILLING:
1 cup powdered sugar
2 teaspoon butter softened
8 oz cream cheese room temperature
1 teaspoon vanìlla
1/2 cup of mìnì chocolate chìps
Instructìons
Preheat oven to 375. Lìne cookìe sheet wìth parchment paper.
In mìxìng bowl, mìx the eggs, sour cream, sugar and pumpkìn together.
In a separate bowl whìsk together flour, bakìng powder, salt, gìnger, cìnnamon and nutmeg.
Slowly add to mìxìng bowl on medìum tìll all ìncorporated.
Pour ìnto prepared cookìe sheet, spread out and bake for 15 mìnutes.
Take a dìsh towel that ìs the sìze of the cake. Cover wìth 1/2 cup powdered sugar.
When cake ìs done and cooled for about 2 mìnutes. Removìng from pan lay cake onto the dìsh towel. Startìng at one end, roll the cake ìnto the dìsh towel.
Place ìn refrìgerator to cool for an hour.

We all love one pot meals. When that one pot meal is a pot of comfort food that's a great bonus! This dish will take about 30 minutes to prepare. Remember this recipe for those hurried weeknights when you need dinner on the table in a hurry.
1/2 cup EACH chopped carrot, celery, and onion
2 T. olive oil
1 lb. bulk Italian sausage
1 (28 oz.) can petite diced tomatoes, seasoned with basil and oregano
3 cups low sodium chicken broth
1 T. Italian seasoning
2 cloves garlic, minced
8 oz. spaghetti (noodles broken in half)
2 T. tomato paste
salt and black pepper
1/2 cup chopped fresh basil
Mince the vegetables in a food processor.
Heat 2 T. olive oil in a large pot over medium-high heat.
Add the sausage and minced vegetables and cook until sausage browns, about 5 minutes.
Stir in diced tomatoes, chicken broth, Italian seasoning, and the spaghetti noodles. Make sure the noodles are submerged in the broth. Bring liquid to a boil. Add tomato paste. Cover pot, reduce heat to medium/low and cook ragu until pasta is al dente, and sauce thickens, 8 - 10 minutes. Season ragu with salt and pepper. Stir in chopped basil.

We love it when we receive gift certificates to The Peerless Saloon and Grille. Dating back to 1899, the Peerless Saloon is on the U.S. Register of Historic Places, and features live music Thursday through Saturday nights. Thursday is open jam session night, and local bands play on Friday and Saturday nights. The Peerless Grille Restaurant is adjacent and offers delicious southern cuisine in a relaxing atmosphere. While at the Saloon, be sure to see the massive mirror-backed mahogany bar that was featured at the 1904 St. Louis World's Fair.
We started with Fried Dill Pickles and homemade tortilla chips. The pickles were lightly battered, with just a hint of heat, and a very nice crunch. The tortilla chips were served hot and lightly salted. Very good.
I chose the Cuban Sandwich. An extremely ample portion filled with smoked pork, ham, pickles, and mustard on delicious and tender bread pressed perfectly. Oh, see those thin, crunchy onion rings. I don't care what else you order while there, order the onion rings. These are the closest to my homemade onion rings I've ever had anywhere. Perfect.
Sweet Harold chose from the daily specials menu board. Hamburger steak, cooked perfectly and nicely seasoned served with a thick brown gravy. As his side dishes, he had a tossed green salad with blue cheese dressing and Brussels Sprouts with bacon.

Sometìmes, a pìcture says a thousand words (not always, by the way). And yet, ì feel the need to mess ìt up wìth words anyway. Here’s what you can tell about these gluten free cìnnamon roll cupcakes just by lookìng at them: they’re gorgeous.
But there are a few thìngs you can’t tell, just by lookìng. The top ìs almost a lìttle crunchy from the cìnnamon-sugar fìllìng, and the cake ìs tender and buttery and not-too-sweet.
They’re up there wìth my gluten free carrot cake cupcakes, whìch ì thought were far and away my favorìte cupcake ìn the whole world. Now, ì’ve got some soul-searchìng to do.

Glaze
3/4 cup (86 g) confectìoners’ sugar

Pumpkin Cinnamon Rolls are made in just 30 minutes! Sweet pumpkin cinnamon rolls are made quickly with crescent dough and then covered in a delicious cream cheese frosting.
These Pumpkin Cinnamon Rolls could not be any easier to make or taste any more delicious. The kids can absolutely help (mine did!) and they only take 30 minutes to make.

INGREDIENTS:
1 package (12 oz) grands crescent rolls
1/2 cup pumpkin puree
1 teaspoon pumpkin pie spice
1/3 cup packed brown sugar
3 oz cream cheese
1 1/2 tablespoons butter
2 teaspoons vanilla extract
1 cup powdered sugar
1 tablespoon milk
DIRECTIONS:
Preheat oven to 350°F. Line a 9x9 baking pan with parchment paper, set aside.
Unroll crescent dough and separate dough into two squares (4 crescent roll triangles will make each square). Firmly press perforations to seal.
Spread pumpkin evenly over each dough rectangle. Sprinkle pumpkin pie spice and brown sugar evenly over rectangles.
Starting at one end, roll the dough over the pumpkin/brown sugar mixture.
Using a serrated knife, cut each roll into 8 equal slices. Place slices, cut side down, in prepared pan.
Bake for 20 to 22 minutes, until turning lightly golden at the edges.

This Slow Cooker Beef Barley Soup is an easy crockpot meal perfect for fall or winter! Loaded with vegetables and tender chunks of beef.
I honestly don’t have a favorite soup, but I do have a few requirements for what makes a Good Soup.
It has to be thicky and chunky. Loads of vegetables, pasta, rice or barley. None of this thin, watered down stuff that will leave you hungry an hour later!
It has to be BIG on flavour. Browning the beed before adding it to the slow cooker adds a ton of it, and I also prefer the texture after cooking as well. I find that it doesn’t disintegrate and get that weird been-cooking-all-day texture like meat often can in the crock pot.
It has to be relatively healthy. Because soup is a great place to hide veggies, and I know you know I’m not a big fan of them raw. I will throw anything in soup, because in the end, it all cooks down and takes on the same flavours. It’s an awesome way to get some good stuff in those picky eaters!
Ingredients
1 tablespoon oil optional
1 lb beef stewing meat
1 small onion finely diced
3-4 large carrots peeled and sliced
2 ribs celery chopped
2 cups finely chopped fresh spinach
3 tablespoons tomato paste
2 teaspoons salt
2 teaspoons minced garlic
2 bay leaves
1 teaspoon dried thyme
1/2 teaspoon black pepper
3/4 cup pearl or pot barley rinsed
6 cups low sodium beef broth
1-2 tablespoons balsamic vinegar
1/4 cup fresh parsley chopped
Instructions
OPTIONAL: In a large skillet, brown meat in oil over high heat. Add to a 4-6 quart slow cooker.
Add onion, carrots, celery, spinach, tomato paste, salt, garlic, bay leaves, thyme, pepper, barley and broth and stir well.

INSTRUCTIONS:
Add chìcken to a large zìp-top bag or resealable contaìner. Combìne remaìnìng ìngredìents and mìx well then pour over chìcken. Marìnate chìcken for 6-10 hours (or overnìght).
Heat a large cast ìron skìllet (see below for alternate preparatìon also) over medìum heat. Add just enough vegetable oìl to skìllet to coat the bottom. Once oìl and pan are hot, add chìcken pìeces, reservìng marìnade. The honey ìn the marìnade can burn ìf you cook these too hot so be sure to have your temperature at medìum – hot enough to bubble and sìzzle but not hot enough to scorch the chìcken. Cook chìcken on all sìdes untìl browned. We’re not tryìng to cook the chìcken through, just sear ìt.

Ingredients:
FOR THE "FILLING" -
1/2 pound ground beef
1 teaspoon salt
1 tablespoon ground cumin
1 teaspoon dried oregano (I prefer Mexican oregano for this)
1 teaspoon chili powder

1 teaspoon paprika
1 cup water - divided
3 tablespoons canned, diced green chiles
2 cups red enchilada sauce
1 cup frozen corn
1 15-ounce can black beans, rinsed and drained
2 tablespoons chopped fresh cilantro
1 large tomato, roughly chopped
Non-stick spray
FOR THE DOUGH -
1/2 teaspoon salt
1 cup masa harina
1/2 teaspoon baking powder
1 cup chicken broth
1/4 cup vegetable or canola oil
ADDITIONAL OPTIONAL INGREDIENTS -
Additional cilantro, for topping
Shredded cheese, for topping
Sour cream, for topping
Lettuce and tomato, for topping
Instructions:
Prepare dough first. Combine the masa harina, baking powder and salt in a large mixing bowl. Stir in oil and chicken stock broth until a soft paste form. Allow to rest on counter while the ground beef mixture is prepared.
Brown ground beef in a large skillet over medium heat until cooked though. Drain. Add in 1/2 cup hot water, cumin, salt, chili powder, paprika, garlic powder and oregano. Stir to combine. Cook until the liquid has evaporated.
Add in the green chiles and enchilada sauce. Stir in the black beans, corn, cilantro and fresh tomato. Add in the additional 1/2 cup of water and stir.
Spray slow cooker insert with non-stick spray. Pour beef mixture into the bottom of slow cooker.
Top with spoonfuls of the masa harina dough. You do not want a solid layer of the dough. You should drop the spoonfuls onto the filling mixture almost like you would dumplings into broth.
Cover and cook on low for about four hours.

The most decadent and richest chocolate cheesecake you'll ever make.
INGREDIENTS
METRIC - US IMPERIAL
Chocolate Cheesecake
3 eggs
450 g cream cheese (2 packs)
120 g sour cream (about 1/2 cup)
1/2 tsp stevia powder
175 g unsweetened baking chocolate (about 1 cup)
120 g erythritol (about 1/2 cup)
250 ml heavy cream
3/4 tsp stevia powder (for the chocolate layers)
Chocolate Crust
165 g hazelnuts (about 1 cup)
1/2 tsp stevia powder
1 tbsp cocoa powder
3 tbsp butter
Chocolate Ganache
1/8 tsp stevia powder
40 g unsweetened baking chocolate (about 1/4 cup)
1 tbsp coconut oil
25 g hazelnuts (about 1/4 cup)
INSTRUCTIONS
Preheat the oven to 150C/300F. Wrap the bottom of a 9” springform pan with aluminum foil.
In a food processor, add all of the crust ingredients and pulse for about 30 seconds to 1 minute until the crust is all crumbly. Take it out of the food processor and add the crust to an 9'' springform pan. Press with your hands until the whole bottom has been covered with the crust.
In a large bowl, add the unsweetened baking chocolate. Add the erythritol to the chocolate. Heat the heavy cream either on the stove or in the microwave until hot and bubbly.
Pour in the hot cream over the chocolate in batches and mix with a whisk. Mix until all of the chocolate has melted. The batter should be just a little thick. It will also look like the milk and oil are separating, but not to worry!
Separate the chocolate into three bowls in a ratio of 3:2:1. For example, the first bowl should have 3 spoons of chocolate, the 2nd bowl should have 2 spoons of chocolate and the 3rd bowl should have 1 spoon of chocolate. Set aside. Add 1/4 tsp of stevia into each bowl.
In a large bowl, add the cream cheese and sour cream. Whip with a hand mixer until nice and creamy. Add the 1/2 tsp of stevia and the eggs, one at a time until nicely incorporated.
Now, separate the cream cheese filling into the chocolate bowls in a ratio of 1:2:3. The 1st chocolate bowl had 3 spoons of chocolate, so add 1 spoon of cream cheese that that one. This is the dark chocolate layer.
The 2nd bowl had 2 spoons of chocolate so add an equal amount of cream cheese. This is the medium chocolate layer.
The 3rd bowl had 1 spoon of chocolate so add 3 spoons of cream cheese. This is the light chocolate layer.

These vegan gnocchi with spinach is one of these dishes. I’ve made it so many times and it’s always a winner. It’s one of my favorite comfort food meals!
Ingredients
For the gnocchi:
1 17.6 OZ (500 g) package store-bought gnocchi make sure to choose a vegan brand
4 handful fresh spinach
2 tomatoes, diced
For the sauce:
1/2 cup cashews (unsalted and not roasted)
2 large cloves of garlic
3 tablespoons nutritional yeast
2 teaspoons white miso paste
1/2 teaspoon salt
1/2 teaspoon Dijon mustard
1 teaspoon tapioca starch
1 cup unsweetened almond milk
black pepper
Instructions
Prepare the gnocchi according to the instructions on the package. Place the spinach in a colander and drain the gnocchi over it (this is an easy trick to wilt fresh spinach).
Make the sauce: place all ingredients in a high speed blender and process until smooth.

Thìs ìs essentìally a recìpe for southern frìed shrìmp that ìs partìcularly tasty ìn a New Orleans style Shrìmp Po’ Boy Sandwìch. French baguette ìs the essentìal bread ìn thìs sandwìch whìch ì have most often seen served very uncomplìcated, wìth only mayo but occasìon wìth a lìttle shredded lettuce too.
A Po’ Boy really should be about the crìspy frìed seafood ìnsìde. My Po’ Boy of choìce when ì vìsìted New Orleans was fìlled wìth crìspy frìed fresh oysters but they can be hìdeously expensìve ìn thìs part of the world. Nonetheless, the same flour/spìce dredge would work equally well ìf you prefer to use oysters.
ìngredìents
2 lbs medìum to large sìze shrìmp
1/2 cup mìlk
canola oìl for fryìng
1 ìn French baguette splìt horìzontally and cut 4 pìeces
mayo
shredded lettuce optìonal
For the flour spìce dredge
1 cup flour
1/2 tsp garlìc powder
1 tsp onìon powder
1/2 tsp chìpotle powder or chìlì powder, more to taste ìf you lìke spìcìer shrìmp
1/2 tsp fìne sea salt
1/2 tsp whìte pepper
ìnstructìons
Soak the shrìmp ìn the mìlk for a few mìnutes whìle you prepare the flour dredge.
Heat the canola oìl to 375 degrees F ìn a deep fryer or use about a 1/2 ìnch of oìl ìn the bottom of a cast ìron skìllet. ìf usìng a skìllet, ì stìll use a thermometer to gauge the temperature of the oìl. ìf the oìl ìs not hot enough anythìng frìed tends to soak up more oìl.
Mìx the flour and all of the ìngredìents for the dredge together.
Draìn the mìlk off of the shrìmp and dìscard ìt.
Toss the shrìmp ìn the flour and spìce dredge. Let the shrìmp sìt ìn the flour for several mìnutes, then toss them agaìn before fryìng the shrìmp ìn the hot oìl.

An amazing sugar-free cheesecake topped with a creamy low carb caramel sauce.
INGREDIENTS
METRIC - US IMPERIAL
1 recipe Low Carb Caramel Sauce
1/4 cup pecans
Crust
1/2 cup hazelnut flour (or almond, cashew, etc.)
1/2 cup coconut flour
1 tsp cinnamon
1/4 cup unsalted butter (melted)
1/4 tsp stevia powder
Cheesecake
440 g cream cheese (2 packs)
120 g powdered erythritol (about 1 cup)
1 tsp stevia powder
1 tsp vanilla
3 eggs
120 ml heavy cream
180 ml sour cream

INSTRUCTIONS
Preheat the oven to 150C/300F.
Line some aluminum foil to a 9 inch springform pan. We will be baking this cheesecake in a water bath.
Add the crust ingredients to the springform pan and mix well with a fork. With your hands, press and form an even crust at the bottom of the pan.
In a large bowl, add the cream cheese and whip for 1 minute with a hand mixer. Add the erythritol and stevia and mix until smooth.
Add the heavy cream and mix for a minute until nice and creamy.
Add the vanilla and 1 egg. Mix until the egg is perfectly mixed with the cream. Add another egg and repeat. Add the last egg and repeat. Finally, add the sour cream and mix for 30 sec-1 min or so until you have no more sour cream bumps and it's evenly mixed through.

This recipe caught my eye and I knew I wanted to try it this week. I had sockeye salmon in the freezer which I let thaw in the fridge today. We all appreciate those meals which come together quickly. The salmon roasted in the oven while I mixed up the salad. This is definitely a 30-minute meal. The asparagus salad is amazing and remember to get a bite of salad with every bite of salmon! So healthy and fresh tasting. Yum!
For the salad dressing:
2 T. EACH white wine vinegar and olive oil
1 T. EACH minced shallots and fresh tarragon
1 t. EACH Dijon mustard and raw honey
For the salad:
1 bunch asparagus (1 lb.), trimmed and cut into bite-sized pieces
1 cup fresh parsley leaves
For the salmon:
4 skinned wild salmon fillets (4 - 6 oz. each)
1 T. olive oil
Salt and black pepper
Preheat oven to 400 degrees F. Line a baking sheet with foil.
Whisk together, the vinegar, oil, shallots, tarragon, Dijon, and honey for the vinaigrette. Season with salt and pepper.
Blanch asparagus in a pot of boiling salted water until crisp-tender, 30 – 60 seconds; transfer to an ice water bath to stop the cooking. Drain and pat dry.
Toss asparagus and parsley with vinaigrette just before serving.
For the salmon, pat fillets dry; rub both sides with oil and season with salt and pepper.
Arrange fillets on prepared baking sheet. Roast fillets until the thickest part are still translucent and a thermometer inserted into center registers 125 degrees for medium-rare; about 8 minutes.
Top fillets with salad.

Ingredients
Buffalo Spice Rub:
1 teaspoon brown sugar
1 teaspoon cumin
1 teaspoon cayenne pepper

1 pound medium shrimp, shelled and deveined (30-32 shrimp)
Salad:
12 cups Romaine lettuce, cut into 1-inch pieces (3 hearts)
2 stalks celery, thinly sliced on the bias

¼ small red onion, thinly sliced
Skinny Buffalo Ranch Dressing:
½ cup ranch yogurt dressing
2 tablespoons hot sauce

Instructions
In a gallon-sized resealable bag, combine the spice rub ingredients, and give the bag a quick shake.
Add the shrimp to the bag and shake them around to evenly coat all sides of the shrimp.
Heat a large skillet over medium-high heat, and add the oil.
Transfer the shrimp to the skillet. Cook the shrimp 30 seconds to 1 minute, then flip them to cook an additional 30 seconds on the other side, until pink. Set aside on a plate.

If you're looking for a comforting casserole that's easy to prepare and delicious, this is the one to try this week. I used a vintage Le Creuset casserole dish to bake. You'll need a 2 - 2 1/2 quart casserole dish.
A little tip here. Cook the barley FIRST so it will be ready to be mixed in with the casserole ingredients when the creamy portion is ready. I think the next time I make this dish, I may add a cup of steamed chopped carrots!
Cooking Spray for baking dish
4 T. unsalted butter, divided
1/3 cup chopped onion
1 t. chopped garlic
3 T. all-purpose flour
1/3 cup dry white wine
1 1/2 cup chicken stock
4 oz. cream cheese, cubed
1/4 cup grated Parmesan cheese
kosher salt
freshly ground black pepper
2 cups shredded rotisserie chicken
3 cups cooked pearled barley
8 oz. green beans, steamed and chopped
1/4 cup chopped flat leaf parsley
1 cup crumbled cheese crackers (I used Cheese-Its)
Preheat oven to 425 degrees F. Lightly grease a 2-quart baking dish.
While you prepare the filling, go ahead and let the barley cook because it's going to take about 40 - 45 minutes to cook.
Melt 3 tablespoons butter in a medium saucepan over medium-high heat. Add onion and garlic and cook, stirring occasionally, until caramelized, 8 to 10 minutes. Whisk in flour and cook, whisking constantly, 1 minute. Gradually whisk in wine and stock. Bring to a boil. Reduce heat and simmer, stirring occasionally, until thickened, 4 to 6 minutes.
Whisk in cream cheese, one piece at a time, then Parmesan, until smooth. Season with 1/4 teaspoon salt and 1/2 teaspoon pepper. Stir in chicken, cooked barley, green beans, and parsley. Transfer mixture to the prepared pan.
Melt the remaining tablespoon butter in a microwave-safe bowl. Add cheese crackers and stir to coat; sprinkle over casserole. Bake until golden and bubbly, 25 to 30 minutes.
Let stand 10 minutes before serving.

5 tbsp tamarìnd sauce*

METHOD
Prepare rìce noodles accordìng to the ìnstructìons on the packet, but do not cook them fully as you’ll gìve them another mìnute or two ìn the wok after. After you ìmmerse them ìn soakìng water, lìft the lìd and gìve the noodles a good stìr to prevent them from clumpìng together and stìckìng to the bottom of the pot. Ingredients
2 pounds Gold'n Plump Boneless Skinless Chicken Thighs
2 tablespoons corn starch
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
1 clove garlic minced
1/4 teaspoon ground ginger
3/4 teaspoon crushed red pepper flakes
1/4 cup apple juice
1/4 cup bourbon (optional)
1/3 cup light brown sugar (packed)
2 tablespoons ketchup
1 tablespoon apple cider vinegar
1/2 cup chicken stock
1/3 cup soy sauce
scallions and sesame seeds optional for garnish
Instructions
Cut the Gold'n Plump boneless skinless chicken thighs into bite sized pieces. Place in a large bowl. Set aside.
In a small bowl, combine the corn starch, salt and pepper. Add it to the chicken thighs and toss to combine.
Heat the olive oil in a large skillet over medium heat.
Add the chicken and cook three minutes on each side. Cook in two batches. Remove the chicken from the skillet and set aside. The chicken needs to only brown, not cook through.
Add the remaining ingredients to the skillet, scraping up any browned chicken bits. Whisk the sauce together and bring to a boil. Return the chicken to the pan and toss it with the sauce. Let the chicken and the sauce simmer for 20 minutes.
While the chicken is cooking, make some rice. Serve the finished chicken over rice and garnish with scallions and sesame seeds. Enjoy!

Yes, I could eat pizza every day. I love pizza! This version is unique in that ricotta and mozzarella are mixed together are the base for all the delicious toppings. The pizza sauce goes on TOP of the cheese. Find your favorite chicken Italian seasoned sausage and don't forget to add those dollops of pesto right before serving!
1 purchased thin pizza crust (12 inch)
1 T. olive oil
1/3 cup part-skim ricotta
1/3 cup shredded part-skim mozzarella
Salt and black pepper to taste
½ cup purchased pizza sauce
12 cup shredded fontina
½ cup seeded and thinly sliced mini sweet pepper
1 link Italian-style chicken sausage (2 oz.) sliced
6 slices fresh tomato
1 – 2 T. purchased refrigerated basil pesto
Preheat oven to 450 degrees F. with a baking stone on bottom rack.
Place crust on a baking stone and brush with oil.
Combine ricotta and mozzarella, season with salt and pepper and spread on the crust, leaving a 1-inch border. Spread pizza sauce on top of ricotta mixture, then top with fontina, peppers, sausage, and tomatoes.
Bake pizza on stone until cheese is bubbling and crust is brown, 15 – 20 minutes. Dollop pesto over hot pizza.

This dish would be great for a dinner party with friends. It's a take on the Italish veal marsala dish. Pork is definitely cheaper than veal which helps the budget. I used hearty baby portabella mushrooms instead of white button mushrooms but choose your favorite variety. The panko adds a nice crunch to the pork cutlets.
2 pounds boneless pork chops
salt and freshly ground black pepper
1 cup all-purpose flour
3 large eggs, lightly beaten
2 cups panko crumbs
1/4 cup chopped fresh parsley, plus more for garnishing
2 lemons, the juice of 1, the zest of 2
5 T. vegetable oil
2 large shallots, thinly sliced
1 pound mushrooms, thinly sliced
1 cup ruby port or dry sherry
1 1/2 cup fresh chicken stock or canned low sodium
1 T. cornstarch mixed with 1 T. cold water
Preheat oven to 250 degrees F. Put the pork chops on a large cutting board and cover with a doubled sheet of plastic wrap. Using a meat mallet, pound the pork to a thickness of 1/2 inch.
Pur the flour, beaten eggs, and panko in separate shallow dishes. Add the chopped parsley and half the lemon zest to the panko and stir to blend. Season the pork lightly on both sides with salt and pepper. Dredge the pork in the flour, dip in the egg, drain the excess, then dredge in the panko. Transfer to a large plate.
Heat a large skillet over medium-high heat. Add 2 T. of the oil and swirl to coat the pan. When the oil is hot, and working in batches, add the pork and saute, turning once, until golden, 2 to 3 minutes per side. Add 2 T. more of the oil, and repeat with the remaining pork. As each cutlet is done, transfer to a plate and keep warm in the oven.
Wipe out the pan and heat over high heat. Add the remaining 1 T. oil and swirl to coat the pan. When the oil is hot, add the shallots and saute, without stirring, until soft, about 1 minute. Add the mushrooms and saute, stirring, until browned, about 3 minutes. Add the port or sherry and lemon juice, stir and simmer until the liquid is reduced by half, about two minutes. Add the stock and bring to a simmer. Whisk in the cornstarch slurry and simmer until slightly thickened, about 1 minute. Adjust the seasoning if necessary.
Transfer the mushroom mixture to a rimmed serving platter and top with the cutlets. Garnish with the extra parsley and remaining zest and serve.

I continue my experimentations with the Instant Pot pressure cooker in order to put together a body of one pot, easy cook recipes for when I'm RVing. On the forums, I keep coming across recipes for Pot Roast and it occurs to me, oddly enough, that I don't think I've ever actually eaten Pot Roast. So I tackled an Amy+Jacky recipe which included lots of the umami Asian ingredients they are famous for incorporating into Western classics. Hmmm. I followed the recipe to the letter and I'm sure it turned out the way it was supposed to. But I'm left realizing I don't really like Pot Roast: too bland and to meat heavy. I prefer spicier tastes and more flavorful ingredients. Oh well, cook and learn. But this has all left me with a hell of a lot of Pot Roast to plow through.

· 1 teaspoon xanthan gum
· 1/4 teaspoon salt
· 1/4 teaspoon dried oregano
· 2 teaspoons baking powder grain free and aluminum free
· 1 large egg
· 1 ounce cream cheese room temperature
· 2 cups finely grated, part-skim mozzarella cheese
For the assembly:
· 4 tablespoons spaghetti sauce (check the carb content)
· 4 slices provolone cheese cut in half
· 2 teaspoons fresh basil chopped (optional)
· 1 tablespoon grated or finely chopped provolone cheese (optional)
Instructions :
For the meatballs:
1. In a medium mixing bowl, mix the ground beef, garlic, basil, oregano, pepper and salt. It's easiest to use clean hands for this. Divide the mixture into about 16 equal portions. Form each portion into a ball shape
2. Heat a large well-seasoned skillet over medium-high heat. If you do not have a well-seasoned skillet, or choose to use meat with a low-fat content, you may need to spray the pan with coconut oil before the next step.
3. Add meatballs to the skillet and cook on medium high. Do not allow the meatballs to touch. If your skillet is too small to cook all of your meatballs without touching, cook them in batches.
4. Brown all sides of the meatballs, then turn the heat to low and continue cooking until done in the middle. Remove meatballs to a plate and set aside.
