4 ingredient skillet pesto chicken breast
INGREDIENTS
One CHICKEN BREAST
Add, One tablespoon vegetable oil
One teaspoon of each Italian seasoning and garlic
Two tablespoons Pesto
Two slices Provolone or Mozzarella cheese
Two slices of tomato
salt and pepper to taste
INSTRUCTIONS
In a skillet, heat up the oil
Add teaspoons each of Italian seasoning and garlic on both sides of chicken breast.
Cook on both sides about 10 min until the center reaches 170 degrees
Spread the Pesto on top of the chicken breast.
Add two pieces of cheese on top of the pesto.
Place two slices of tomato on top of the cheese
Sprinkle with salt and pepper
Cover with a lid for a couple of minutes until cheese is melted

Slow Cooker Chicken and Dumplings – An easy version of the comfort-food classic that simmers away all day in the crockpot. You will love this simple and delicious recipe!
Ingredients
1 1/2-2 pounds boneless skinless chicken breasts or thighs
1 medium onion, chopped
2 Tablespoons butter
2 teaspoon dried parsley
1/2 teaspoon seasoned salt
1/4 teaspoon poultry seasoning
1/4 teaspoon garlic powder
2 cups chicken broth
2 cans or boxes cream of chicken soup
10 canned regular size, buttermilk biscuits (I use two small cans, each contains five biscuits)
Instructions
Place chicken in the bottom of slow cooker, along with chopped onion and 2 TB butter. Sprinkle with dried parsley, seasoning salt, poultry seasoning, and garlic powder.
Add chicken broth and cream of chicken soup to crockpot, and stir all ingredients to combine. Place lid on top and cook over low heat for 6-8 hours, or high heat for 4-5 hours.
After cooking for at least 6 hours on low, or 4 hours on high, remove lid and stir mixture with a spoon or fork, breaking apart the chicken into smaller chunks.
Chop the biscuits into quarters and add to the crockpot. Push biscuit dough down into the crockpot a bit so that they will absorb the gravy as they cook.
Replace the lid and continue cooking for 1 more hour over high heat until biscuits are cooked through and begin to turn golden brown. Enjoy!

To make this recipe spicy, you can add 1 to 2 tsp of red chili flakes to it.
You don’t need to marinate the beef beforehand in this recipe, unlike the other recipes for Mongolian beef. It’s the quickest and most delicious way of making it!
Add an additional teaspoon of cornflour/cornstarch diluted in two teaspoons of water into the recipe if you want it to be slightly more thicker and stickier.

INGREDIENTS
2 pounds beef tenderloin/beef chuck, cut into strips
½ cup cornstarch/cornflour
oil, for deep frying
For the Sauce
2 tbsp cooking oil
1 tbsp finely chopped ginger
1 tbsp finely chopped garlic
½ cup soy sauce
½ cup rice vinegar
½ cup water
1 tsp hoisin sauce (optional)
½ cup brown sugar
1 tsp cornstarch, diluted in 3 tsp water
1 tsp red chili flakes (optional)
½ cup green onion, chopped into 1 inch pieces
INSTRUCTIONS
Start off by tossing the beef strips in cornstarch. Make sure the strips are coated evenly with cornstarch.
Deep fry the beef strips for 4-5 mins, drain the oil and set aside.
In a saucepan, heat oil on high heat setting. Quickly add in the ginger and garlic. Stir quickly for 10 seconds. Immediately add in the soy sauce, water, rice vinegar and hoisin sauce. Bring the sauce to a quick boil.
Add in the brown sugar and cornstarch. Mix thoroughly.
Now add in the beef strips and let cook for 2 minutes.
Add the green onions and cook for an additional minute.
Serve hot with rice.
NOTES

Very Berry Pavlova Recipe
This pavlova is light, airy and filled with all the best summer berries. A sweet end to a sweet day! Meringue is neither complicated or time consuming. It takes some time to bake/dry out in the oven, but your oven does all of the work. It is crisp on the outside and marshmallowy soft inside.
Very Berry Pavlova
Ingredients :
· 6 egg whites room temperature (*see tip 1)
· 1 1/2 cups granulated sugar
· 2 tsp corn starch
· 1/2 Tbsp lemon juice
· 1/2 Tbsp vanilla extract
· 1 1/2 cups cold heavy whipping cream
· 2 Tbsp granulated sugar
· 4-5 cups fresh berries blueberries, raspberries, small strawberries, blackberries..** see tip 2
· 1-2 kiwi fruit peeled and sliced
How to Make a Berry Pavlova:
1. Preheat the Oven to 250˚F. Line a large baking sheet with parchment paper.
2. Using the whisk attachment on your stand mixer, beat 6 egg whites and 1 1/2 cups sugar for 6 to 7 minutes on high speed, or until stiff peaks form. The mixture will be smooth and glossy.
3. Add 1/2 Tbsp lemon juice, 1/2 Tbsp vanilla extract and 2 tsp corn starch and continue mixing another 15 seconds or until well blended.
4. Transfer immediately to a large sheet of parchment paper and use spatula to form a 10" round ring, making a deep indent in the center to accommodate the cream and berries later. The center will rise so make a substantial well in the center.

Ingredients
1/2 ripe avocado
2 slices whole grain toast (or toast of your choice)

Do keep an eye on your coconut water ingredients, though, if you want to limit sugar, since some brands add a lot. First, pan fry the bone-in, skin-on chicken thighs to get that nice brown color on the outside. Then, simmer them in a lemon-chicken broth with bacon for about 20 minutes until they are completely done and cooked. Finally, add cream and even more bacon. So good !!
Pan-Fried Chicken with Bacon Cream Sauce
Ingredients :
· 2 tablespoons olive oil
· 5 chicken thighs
· salt and pepper
· 3 garlic cloves minced
· 1 cup chicken stock
· 8 strips bacon , cooked, fat drained off, and chopped into small chunks - divided
· 1 lemon thinly sliced
· 2/3 cup heavy cream
· 2 green onions chopped
Instructions :
1. Heat olive oil in a large skillet on medium-high heat. Generously season chicken thighs with salt and pepper - make sure to season under the skin too. Add chicken thighs skin side down to the hot skillet. Cook for about 5-7 minutes on high-medium heat, covered, skin side down, without flipping, checking occasionally, until the skin side is very well browned.
2. Remove chicken from the skillet.
3. Add minced garlic and a small amount of chicken stock to deglaze the pan and cook the garlic for about a minute. Add the remaining chicken stock (1 cup). Add half the bacon (cooked, fat should be drained off, and chopped into small chunks).

1 box Uncle Ben’s Long Grain Wild Rice (original recipe)
1 can cream of mushroom soup
1 can cream of celery soup
1 can water
(You can add another can of water for moister rice.)
Chicken breasts or tenders
DIRECTIONS:
In a greased 9 x 13 pan, mix the box of rice, cans of celery and mushroom soup and
one can of water. I always add the extra can of water because I like moist rice.
Arrange the raw chicken on top of the rice mixture….
Cover and seal with foil……
