I learned how to cook of south Indian food.

Teacher was from south India.

 

I love Indian food.

And I most love south Indian food.

 

I'll try to cook south Indian food at some early date.

This wasn't stir of spinach.

It was rice of spinach!

Taste was wonderful.

 

I like south Indian food.

Because north Indian food is too oily.

Baingan bharta is a dish from the India that originated in the

State of Punjab. It is a vegetarian dish that is prepared by mincing eggplant that is grilled over charcoal or direct fire. This infuses the dish with a smoky flavour. The smoked and mashed eggplant is then mixed with cooked chopped tomato, browned onion, ginger, garlic, cumin, fresh cilantro (coriander leaves), chili pepper, and oil or ghee. The dish is often eaten with roti or paratha.

Tried a new recipe, Indian food apart from their colourful desserts is never that pretty, however I love it and yes that is my finger in the corner which I just noticed!

The ingredient are: Cabbage, Channa dal/ Chickpea flour, Onion, Garlic, Ginger, Cilantro, Garam Masala, Red Chili powder, salt and Ghee (Clarified butter).

Delicious, delicious, delicious!

 

For this recipe and, as suggested in the recipe, I ground coriander seeds, nigella seeds, fenugreek leaves, cumin and black pepper fresh. This is really worthwhile and taste so much better than ground spices that were stored for some time.

 

I didn't have green bell peppers, so added zucchini for colour.

 

Vegetables

- sliced red onions

- garlic

- tomatoes

- yellow bell pepper

- zucchini

- sweet potato

- butternut squash

- button mushrooms

- ginger

- tomato purée

  

Indian Delicacy made during festivals, eaten with dahi(yogurt), tamarind and coriander chutney, sprinkled with flavour full masala made of Indian spices and few pomegranate.

Eastern Breakfast

paratha, roti, omelette and chickpeas daal

 

INGREDIENTS

- 4 chicken breasts

- 2 tablespoon ghee or vegetable oil

- 1 tablespoon garlic paste

- 1 tablespoon ginger paste

- 2 green chilli peppers finely chopped

- 1 tablespoon cumin powder

- 1 tablespoon coriander powder

- 1 teaspoon turmeric

- 1 - 2 tablespoons red chilli powder

- 750ml (3 cups) heated curry sauce - See the links to my recipes above.

- 1 - 2 tablespoons mango chutney

- salt and pepper to taste

- Fresh coriander to garnish

- A pinch of garam masala (Optional)

 

INSTRUCTIONS

For best results, always warm your curry sauce before adding it to the curry.

Heat the ghee/oil over medium heat in a large pan or wok.

Scoop in the garlic and ginger pastes along with the chopped chilli peppers.

Allow them to sizzle for about 15 seconds and then add the cumin, coriander powder, chilli powder and turmeric.

Stir to combine.

Now pour in the heated curry sauce and mango chutney. The ingredients should spit their approval in the hot pan.

Add the chicken pieces and allow to simmer for about three minutes. If you slow cooked your chicken, you could add a tablesoon or two of the broth for extra flavour.

Test for seasoning and add a little salt and pepper.

Sprinkle with the fresh coriander and serve.

A teaspoon of garam masala sprinkled over the top at the end of cooking is a nice touch!

Chilled and good looking cocktails were served at the Indian restaurant in Blue Waters, Mumbai. Was too busy shooting pictures and never got a chance to taste it!!

Went to dinner with a friend and her husband. We had Indian.

 

Since she is vegetarian (not vegan, *whew*) she was open to whatever. The only kinda meat thing on this plate is shrimp/prawns. This was my plate, BTW. We all had the same entrees.
