The bananas used here are called “pisang 42” which resembles “pisang emas” or “gold bananas”. Upon asking, the fruit stall proprietress went further to explain the characteristics of “pisang 42” to me. She said, “Pisang 42 will take 42 days to ripe and it has a protruding tip.” Anyway, we ate this variety for the 1st time.

It has taken me many failed attempts to crack this and boy was I determined this time. I followed Dreena's Homestyle Cookies recipe but made a few adjustments so the recipe looks more like this:
1 cup spelt flour
1 tsp baking powder
1⁄2 tsp baking soda
1⁄4 cup fruit sugar
1⁄4 tsp sea salt
1⁄3 cup apricot syrup (see note)
1⁄4 tsp blackstrap molasses
1 - 1 1⁄2 tsp pure vanilla extract
1⁄4 cup melted soya margarine
1⁄3 cup non-dairy chocolate chips
Preheat oven to 350°F (176°C).
In a bowl, sift in the flour, baking powder, and baking soda.
Add the sugar and salt, and stir until well combined. In a separate bowl, combine the apricot syrup with the molasses and vanilla, then stir in the oil until well combined.
Add the wet mixture to the dry, along with the chocolate chips, and stir through until just well combined (do not overmix).
Place large spoonfuls of the batter on a baking sheet lined with parchment paper and flatten a little.
Bake for 12 minutes, until just golden (if you bake for much longer, they will dry out).
Let cool on the sheet for no more than 1 minute (again, to prevent drying), then transfer to a cooling rack.
Makes 8-10 large cookies.
Note: I didn't have the maple syrup and had bought these amazing organic dried apricots the other day, you know the dark kind, not the orange, sulphur coated ones. I soaked these in some water and then poured the lot into a food processor until it resembled the consistency of a syrup.

Liang Seah Street is reminiscent of early Singapore. It is lined with simple old two and three-storey shophouses on either side. The whole street is occupied by eating places, bars, shops and commercial units.
Recipe from Dreena Burton's post on True/Slant. Made with amaranth flour. I didn't have amaranth flour so I ground my own, and it was not as fine as the flour you can buy. They still taste great- like real chocolate chip cookies!

Homestyle Hawaiian was several different names before but still sells the best Hawaiian food (I reckon) in San Diego.
Deep-frying is the way to cook these prawns usually. But, I personally prefer them to be pan-fried in a little oil such that they are less oily and reduce oil wastage and cost as I do not re-use oil used for deep-frying.

This is what we're making: Homestyle White Bread with Poppy Seeds. It's from The Bread Bible, by Beth Hensperger, which is sadly out of print. Sadly, because it's a fantastic bread cookbook. There is an imposter Bread Bible currently in print - do not be fooled! It's not the same book at all, and isn't as good.
It takes 4-6 hours to make bread, usually, depending on how long the rises take (though only about an hour of that is active work). It's good to start sometime between 8a and 4p on a weekend day. It's possible to bake bread on a weekday night, but you'll probably end up staying up later than you expected. The weekend works well.
We're going to make our bread in regular loaf pans - glass, ceramic or metal. If you don't have two loaf pans, get them before you start.
Or Family Beancurd, same goddamn difference. At Papajin. This was decent, but nothing special. Avoid the sushi, they put mayo in it! Barf!
