Curried carrot and lentil soup is a delicious and filling meal, ideal for chilly evenings. It's great for making in advance so that you don't have to worry about dinner for a week.
This is the last gluten-free vegan cupcake leftover from Flo's birthday. She and her friend, Megan, had made them for her party, since Megan is gluten-free. We all tried a sample, and I have to say, I think it "takes the cake!" It's a box mix from the "Gluten-Free Pantry" brand. The icing was just a mix of soy margarine, lots of powdered sugar, arrowroot powder, xanthan gum powder & strawberry juice for the "pink" color.
The only shopping I did this week was for some gluten free products to try. I give two thumbs up to the pancake mix and bagel chips; one to the pizza crusts. They are okay but not great.
