I love waffles! This was one of the food items I was really sad about not being able to have when I found out I needed to go gluten free. I tried a few frozen waffles and they were fine, but there's nothing like homemade waffles! Thankfully, I found the BEST mix (Pamela's Baking and Pancake Mix) for making gluten free waffles!

I'm tired of trying to make everything pretty.
We make these quick muffins almost every week. Leftover oatmeal with the berries cooked in. A handful of flours, baking powder, xanthan gum. An egg. Some sugar.
It's all by feel. Nothing written out.
They're great. Moist and full of whole grain goodness. and the kid gobbles them.

Mashed banana, 2 eggs, 2 generous teaspoons peanut butter. Mix. (makes 6 small pancakes)
Maple syrup optional.
Raw cranberry-orange sauce and cashew-brazil nut whipped cream atop maple-sweetened gluten-free gingerbread buckwheat pancakes.
Oh yeah.

I learned to cook at a young age. Always enjoy cooking . in the proper setting it relaxes me. Now for health reasons I eat strictly gluten free so I've learned to get creative with GF options. Above is my GF pasta with GF Italian sausage, eggplant, peppers, onions, mushrooms, baby spinach and of course...garlic. Mangiare!!!
