Polish-style on the left, Italian-esque on the right. The better of the two was definitely my version of the Polish street zapiekanka (french bread pizza).

 

The few times I have gone back to Poland I could never pass up the little carts on the street selling zapiekanki. The toppings differ slightly city to city but I noticed the obligatory ones always seem to be finely chopped mushrooms with corn. Of course, ketchup and mayo is freely spread on top.

 

My version of the Polish zapiekanka was close to what I remember of the real deal. Bottom layer is vegetarian 'beef' crumble sauteed with garlic (this nicely subbed for the mushrooms), corn kernels, mozzarella cheese with ketchup, mayo and scallions on top.

 

The other one (which would have been okay on it's own but had no chance here) had pizza sauce, sundried tomatoes, kalamata olives, mozzarella and capers.

I have been more conscience of my protein intake since I cut meat out of my diet, so sometimes I'd use these fake beef strips from Trader Joe to add texture to my stir fries. I sure hope the Marginal written on this vacuum pack means nothing bad, cuz I ate it all the same, lol.

Stroganoff of imitation beef from Trader Joe's was a huge success.
