Garden Tagine by ~Jany~

A simple Garden Tagine today. Couscous with reconstituted currants, lemon zest, thinly sliced almonds and parsley, chicken drumsticks marinated in Ras El Hanout and yogurt, freshly picked yellow summer squash and a haphazard assortment of other veggies from our kitchen garden. The couscous soaked up the flavour from the roasting chicken and sweet onion wedges, and was soft, fluffy and flavourful after an hour in the Tagine. I fell in love with this pot one evening after tasting the most tender Lamb Tagine in a restaurant overlooking the Jemma el-Fnaa square in Marrakech and then again a fresh Sardine one in Essaouira. You’ve all heard me talk at length about the suitcase full of spices I brought back from Morocco like the hoarder that I am 🙈 and it is these whole spices that I grind fresh and use in dishes like these 😍 Served with a Grilled Peach and Arugula salad with a tart rhubarb dressing that didn’t lend itself well to photography being a rather odd pink pool on the fresh greens but was nonetheless tart and refreshing on the palate after this umami rich Tagine ❤️Cooking this way allows me to throw it all in the pot and return an hour later to a flavourful meal without much fuss or hands on cooking time #busymama #seasonaleating #umami #tagine #taginecooking #kitchengarden #simplemeals #growyourownfood #zucchini #courgette #summersquash #wholefoods #nourishing #nutrition #nourishingtraditions #moroccan #couscous #quickmeals #childfriendly #zucchiniflowers #gardentoplate #earth #gratitude #raselhanout #chickendrumsticks #freshherbs #organicgarden #feedingmyfamily #madewithlove #healthyeats
