I first boiled the beetroot, then quartered and peeled it, drizzled with balsamic vinegar and a sprinkle of sea salt and kept warm wrapped in foil.

 

The halloumi was sliced in three and marinaded in olive oil, pimenton and pepper while the beetroot was boiling., then fried in the marinade with the mushrooms (sliced in half).

 

For the couscous, I deseeded and finely chopped two tomatoes and cooked them down in olive oil with garlic, a bit of ginger, dried mediterranean herbs and freshly sliced chilli. Into that I stirred the couscous, added as much boiling water as needed and put on a lid until the couscous was nice and plump.

No Blood and Bone, or chook manure for beetroot, Liquid Fertilizer only. Likes Comfrey Tea, Organic Mix. Tomato and Vegy liquid fertilizer gives them a boost. If the planters are too shallow they will get a light coloured scale on them, without over head misting, but in a water well planter they are bombproof. Can be grown quite close together, and one outer leaf picked regularly. Do well in a well lit area, without direct sunlight on them, even in winter here.

They don't mind Leeks and Spring Onions to share the container. These planters need bricks right around them as the hens will dig all the growing medium out from under the metal walls in no time if there is not sufficient protection around all sides. Even with the bricks around these sides they have dug in between them and caused the box to become un level again. Lined with polly styrene to prevent the roots from being affected by heat or cold, makes the planter ideal for worms, that the hens cant resist. Silver Beet grows well with beetroot but both the Silver Beet and Beetroot doesn't grow as well if with Bok Choi, Kale or Lettuce. A Tomato plant in this planter died as soon as I put these beetroot seedlings into the planter with it. This 600H x 900 x 900 planter was $90 on special from Home Hardware, But they need to be well lined and insulated as they are either too hot or too cold for the plants.

2 weeks on from planting, the distinctive deep red stems are clear to see on these beetroot seedlings. They will be carefully lifted from their greenhouse module trays and planted out once they have 4-6 leaves.

the trick to doing the cream swirl is to pour very slowly :O)

i made my mum a beetroot cake for mother's day. it sounds bizarre but it was very similar to carrot cake and very nice.
