Beet Risotto

I always think I've done it wrong at this stage. The first few times I timed everything obsessively. Now I mostly wing it and know when the changes happen.

 

And I still think it's wrong at this stage. Where is the rice, oh no! But in a few minutes, it'll be awesome.
