Strawberry Jam!
The last attempt had too little pectin in it, I suspect. It's a thick sauce that works on sandwiches, but not as easily (it kinda soaks in).
That was 2L berry mush, 1.5 pkgs pectin, 6C sugar.
This was 1.8L berry mush, 2.5 pkgs pectin, and 7C sugar. I didn't skim, as the berries are put through the tomato press, and as such, there are no floaters.
The pectin pkg suggested 1L berry mush, 1 pkg pectin and 7C sugar! Good grief! That would have been 14C of sugar.
Jam is complicated. But I will call this a limited success if, when we open the first jar, it's not solid, but jam. One jar with a little room in the top shows movement if you twist the jar, so I think we're good.
