Vegetarian Stromboli

Foccacia dough with stuffing of eggplant, potato, broccoli, onion, garlic, oregano, black olives, mozzarella, and tomato sauce. Steam the potatoes and broccoli, sauté the eggplant, onions, oregano and garlic, mix with olives and mozzarella and seasoning to taste. Then spread it on the dough, roll it up, score the top, and bake. Slice and serve, also tasty cold so it makes good leftovers, or you can make mini loaves for lunches. This is Sheridan's favourite meal. It's a lot of work to prepare, but very satisfying results.
