For my taste (and blood pressure) 3/4 oz (21g) of salt is too much. I now halve that and the method I have adopted for every loaf.

 

Less work, less effort and many less huge holes in the crumb which makes eating a sandwich less messy! The texture is very even with a good distribution of smaller spaces.
