Frozen berry pie with homemade graham cracker crust -- so delicious... and super easy to make :)

 

Recipe:

Crust:

1 package of graham crackers (not a whole box, just a package within one box)

1/2 stick unsalted butter, melted

1/4 cup sugar

-- chop crackers in food processor, in a bowl mix chopped crackers, butter and sugar w/a fork. Then press into pie tin to form a crust. You can add more graham crackers than just the one package to make a thicker crust.

 

Filling:

1 bag frozen mixed berries

8 oz light cream cheese

8 oz cool whip

zest of 1 lemon

-- let the berries and cream cheese sit out for a while to help chop them up in the food processor, then put all of the above ingredients into the processor and chop to your liking -- if you leave some bigger chunks of berries it will obviously make the pie filling a little chunkier.

 

Freeze for a few hours and serve :) It's not too terrible for you, and it's SO good!
