Pumpkin Cheesecake Bars with Gingersnap Crust

I wish I could take credit for these tasty treats, but they were all my mom's doing. I liked them so much I just had to share the recipe anyway! I would normally share these later in the week, but I wanted to post the recipe now in case you wanted to do some baking for Halloween.
