Irish Carbomb Cupcakes
I hope everyone had a lovely Valentine's weekend! I celebrated with the two loves of my life - my husband and chocolate.
These cupcakes are "Irish Carbomb" cupcakes, named after the drink of the same name combining Guinness, Baileys and whiskey. Why did I make these for Valentine's Day? Well, my husband loves Guinness and I love Baileys (and chocolate) (and butter). Plus what says love more than cupcakes baked with booze?!
The cake portion has an intense chocolate flavor with just a hint of Guiness and the frosting is a quick buttercream flavored with Baileys, all topped with a few dark chocolate shavings. I might have put more Baileys in the frosting than the recipe called for, but you can't prove anything. The recipe included a chocolate ganache and whiskey filling but I skipped that part. I'm not sure how much it would have added to the cupcakes because they're already really fantastic without it!
The rose props are courtesy of my wonderful husband who buys me flowers every year for Valentine's Day, even though I tell him he doesn't have to :)
